How is Edinburgh's chippy brown sauce made?

We went along to Gino's chip shop in Longstone to discover how Edinburgh's famous chippy brown sauce is made and what is in it.

00:00We all love Edinburgh's traditional chippy brown sauce, but where does it come from and what's in it?
00:07I went along to Gino's Chip Shop in Longstone to find out more about our chippy sauce,
00:12and I discovered that the base sauce used by most chip shops in Edinburgh
00:17actually comes from Glasgow company Walter Black Foods and their Gold Star brown sauce.
00:24So what we do is we get it from a company called Walter Black, which makes Gold Star,
00:30they also make ketchup, etc.
00:32And it gets delivered to us, we get about 40-50 gallons at a time,
00:36so it's about once every three weeks.
00:38And yeah, we just put them all in storage and then we dilute them all.
00:43So we do about four or five a day, which will get about eight half bottles a day.
00:51And we dilute about a third of water and give it a mix and that's it.
00:57Walter Black's Gold Star brown sauce is made with onions, spices, sultanas and other fruits.
01:04Despite its colour, brown sauce is a tomato-based sauce which is then blended with malt and spirit vinegar,
01:09sugars, dates, cornflour, rye, flour, salt and spices, all on the road in Glasgow.
