Snow-topped chocolate cheese

Today I reproduce a master's recipe to make
snow-topped chocolate cheese

Melt 35g unsalted
butter over low heat

Turn off the heat and add 60g of crushed
Oreos and mix well.

Fill the mold with crushed Oreos

Crush the Oreos and compact
them. This time the mold is SN2128

After pressing, place it in the refrigerator to cool and set.

Then make the raw chocolate cheese paste

Cream cheese 200g
50g sugar

Blend the cream cheese until smooth

Add one whole egg
and mix well

Sift in 10g of corn starch
Stir evenly

Dark chocolate 50g
Heated whipping cream 75g

Stir until completely emulsified

Pour the chocolate
cream into the cheese batter and stir evenly

Pour the cheese paste into the mold

Add 2cm of hot water to the bottom baking pan

Place in the oven and heat in a water
bath at 170°C for 40 minutes. Cool
and then refrigerate overnight.

Finally do the snow top part
Cream cheese 50g
5g sugar

Stir the cream cheese smoothly
and add 50g of light cream

Whip the cheese cream

Spread the whipped
cream on top of the cooled cheesecake

Smooth it out ~ it looks better!

Unmold and eat!

Black and
white, looks delicious too

Make one portion
and divide it into about 6 pieces
