00:00Hi, my name's Tom Warner, we're here at Falls Farm launching our new nature tours at the farm.
00:06So you know we do fantastic tours of the distillery where you get to see the botanical gardens,
00:10we've got an even better tour now where you can come to the farm, get a tractor and trailer ride
00:15around the farm, see all the botanical garden growing areas and then you get to do some
00:20cocktail making, some beekeeping, a little bit of horticulture, so the full distillery experience
00:27where you get to find out about all parts of our operation but especially the parts that are linked
00:32to mother nature. We're going to make a lemon balm smash today which is a nice simple recipe
00:39that you'll be able to recreate at home and of course our number one important ingredient here
00:44is our Warner's lemon balm gin which is distilled here in our farm, in our barn using lemon
00:52balm that's been harvested down in Botanical Garden 3 down at the bottom of the valley.
00:57So the very simple method that we're going to follow is grab your tin, your cocktail tin and
01:02grab a good old handful of your freshly foraged lemon balm, squeeze it right down to the bottom
01:08and what we're going to do first is use our muddler here to essentially squash down, muddle and mix up
01:15all of those leaves and stalks that you have down at the bottom. It'll look a little bit messy but
01:18it'll start to smell absolutely amazing as you release all of those wonderful flavours and then
01:24using our jigger we are going to pop as ever a double measure of our Warner's lemon balm gin
01:30so that's all the way to the top try and get it as flat as you can on the top and pop that
01:35pop that over and then we're going to do 15 ml each of our lemon juice and of our sugar syrup
01:41so if you turn it over that's around about 10 ml so you'll sort of want one of those and a little
01:45dash and the aim is to have roughly the same amount of of lemon as sugar so they should balance
01:51each other out because you sort of want that sweet sort of but also citrusy sour nice nicely balance
01:56and then using your ice bucket you're going to load your shaker full of ice and then we're going
02:02to pop our pop our top on a couple of taps just make sure it's secure and then I want to see your
02:07best shaking faces that you've got whatever whatever you want to do to make your your fun
02:12and then top off this is your first sort of level of straining so that's going to keep
02:15back your big rocks of ice and your big bits of of the lemon balm and then you'll find a fine strainer
02:21swash out your ice that's nicely chilling down your glasses here
02:24and then gently pour out your lemon balm smash into your glass
