00:00This crispy pesto chicken with whipped feta and sun-gold tomatoes is everything I want in a healthy chicken dinner.
00:06First, we're gonna do the standard breading procedure of taking our chicken breasts and breading them with flour, eggs mixed with pesto, and then breadcrumbs.
00:14Then we're gonna have a skillet with some olive oil, and we're gonna fry the chicken until golden brown and crispy.
00:18Then in the same skillet, let's blister our tomatoes.
00:21Just look how cute these sun-gold cherry tomatoes are.
00:24Crumble up some feta into a food processor and add Greek yogurt, garlic, lemon, olive oil, and blend it up.
00:30It's gonna create a salty, briny, creamy, and rich whipped feta.
00:34Onto a plate, dollop and spread out that luscious briny whipped feta, and
00:38then sprinkle on some Aleppo pepper for some spice, and then top with some fresh herby pesto.
