We challenged chefs of three different skill levels - amateur John, home cook Diane, and professional chef Lish Steiling - to make us their take on a classic risotto. Once each level of chef had presented their creations, we asked expert food scientist Rose to explain the choices each made along the way. 00:07 - I'm Diane and I'm a level two chef.
00:09 - I'm Lish and I've been a professional chef
00:11 for over 25 years.

00:15 - Everybody likes risotto.
00:16 It's a crowd pleaser no matter where you go.
00:18 - I'm using a different kind of rice,
00:19 which I feel like is gonna be really controversial.
00:21 - I'm making bubbles and caviar risotto.
00:23 You're gonna have to stick around
00:25 so that you can find out what all that means.
00:27 [whooshing]
00:29 [chimes]
00:31 - First I'm gonna start by prepping all my ingredients.
00:35 I have no tricks about how to not get corn everywhere,
00:38 but my dog loves it.
00:39 [laughing]
00:40 I chose the corn and the tomatoes
00:41 just because when I think about risotto,
00:44 I feel like it's always like mushrooms
00:45 or a butternut squash in kind of like colder weather.
00:47 So I wanted to try something
00:48 that would be a little lighter and brighter.
00:50 - I like to keep it nice and simple,
00:51 but also a little bit healthful.
00:53 So I'm gonna add mushrooms and asparagus.
00:55 A nice inch of the ends there.
00:58 Wait, were these pre-trimmed?
00:59 - The flavor profile I'm looking for in my risotto
01:02 is actually clean and refreshing.
01:04 We're gonna add some scallops, bit of that ocean flavor.
01:07 - Scallops would be great in risotto.
01:09 - And then the fresh licorice flavor, I guess, of fennel.
01:12 And chives, because that just brightens everything
01:14 and makes everything happy.
01:15 - Now for the mushrooms,
01:17 roughly the same size as the asparagus.
01:19 People are gonna, again, come for me with the chopping,
01:21 but I don't care, it's my knife.
01:22 They always say, "John's gonna get hurt."
01:24 And I'm like, "Yeah, I definitely have been."
01:26 Nice, thin, little ribbons of basil.
01:29 - Woo!
01:31 I'm gonna address my fennel here
01:32 for a little savory sweetness.
01:35 I'm gonna use the bulb for my risotto,
01:38 but I like to use the fronds as well
01:40 for a little gourmet garnish, if you will.
01:43 So these perfect little light green ones,
01:46 that's what you're looking for.
01:47 It's gonna impart that bright licorice freshness
01:49 to the garnish of the dish.
01:51 - I'm gonna use Parmesan to thicken it up
01:53 and it's gonna add a nice salt to it as well.
01:55 And the next thing is my shrimp.
01:57 I bought these really nice big jumbo shrimp
01:59 with the shells on so that I can use them
02:02 to enhance my stock along with the corn cobs.
02:04 - So I chose scallops today.
02:06 These are beautiful, large, dry-packed scallops.
02:09 They're gonna add a little fresh ocean sweetness
02:12 to the dish and it's gonna pair perfectly with the risotto.
02:15 - So now I'm gonna saute my vegetables.
02:17 I like to pre-cook them, put them on the side,
02:19 and then add them into the risotto at the end.
02:21 Just got some simple olive oil.
02:22 - I'm gonna use avocado oil
02:23 'cause it has a higher smoke point.
02:25 It actually doesn't burn as quickly as olive oil does.
02:28 - I'm just gonna saute this for about three to four minutes
02:30 and really what I'm looking for
02:31 is everything getting a little browner, a little softer.
02:35 - I wanna make sure that my scallops are super dry.
02:37 You want dry food to hit a hot pan.
02:40 Season generously with salt and pepper.
02:43 - I think really for a lot of food,
02:46 all you need is some salt, pepper, and oil
02:49 and it's delicious.
02:50 Keep things simple.
02:51 Just let the flavor of the food come out.
02:53 - Little bit of olive oil into my pan.
02:56 Ooh, bubbles.
02:59 They're starting to get a nice little browning to them.
03:04 Oh yeah, see, it's starting to curl up.
03:05 - Scallops cook very quickly.
03:07 They don't need much time at all.
03:08 I just wanna get brown on the first side.
03:12 You can smell the sweetness coming out.
03:14 It smells like the ocean.
03:16 Hello, lover.
03:18 - It's got that nice char.
03:19 - The asparagus is that bright green color now
03:21 so you can tell it's cooked.
03:22 The mushrooms are getting smaller.
03:24 - And it's got this beautiful peachy color,
03:26 so it's ready to go. - It is ready to go.
03:28 Oh!
03:29 - Now I'm just gonna add a little nubbin of butter here.
03:32 All right, I'm gonna remove these from the heat,
03:36 give 'em a little squeeze.
03:36 Oh, those are perfect.
03:38 I can tell they're done
03:39 because they've definitely changed in texture,
03:42 but they're still soft in the center.
03:44 That's what I'm looking for.
03:45 And, ooh, you see that, that little jiggle?
03:48 It's almost like jello.
03:49 Stock is such an important part of risotto
03:51 because it's really what flavors the whole dish.
03:54 The rice absorbs it.
03:55 So the rice ends up tasting like what it absorbs, right?
03:59 So you really need to build a solid base to start with.
04:02 - My risotto broth is super complicated.
04:05 I'm gonna take this store-bought broth
04:07 and pour it in the pot.
04:09 Why make it from scratch?
04:11 - I'm using store-bought vegetable broth.
04:13 I'm doing this no-stir technique.
04:15 So I'm rinsing the rice in the vegetable stock
04:18 so that some of that starchiness releases into the broth,
04:20 and it should thicken up with way less stirring.
04:22 I'm just gonna give it a quick strain.
04:25 - We have a little bit of toasted fennel seed here,
04:28 about two teaspoons.
04:29 We're just gonna break 'em up a little bit
04:31 in the mortar and pestle
04:33 to bring out some of those aromatics,
04:36 a little bit of the oil, one bay leaf,
04:39 two garlic cloves smashed and peeled,
04:41 just some thyme, bruise it up a little bit,
04:44 get the aromatics going.
04:46 Ooh, that smells good.
04:47 Lemon zest.
04:48 I want this to be a very clean stock,
04:51 light, flavorful, citrusy, a little sweetness.
04:55 I have some shallots, halved, very simple.
04:58 You don't even have to peel 'em if you don't want.
05:01 And a couple of Parmesan cheese rinds, Parmigiano-Reggiano.
05:04 These not only add a lot of flavor to the stock,
05:07 but they're also delicious to nibble on at the end.
05:09 I'm gonna cover it with a bunch of water here.
05:12 I'm gonna let this come to a simmer.
05:14 After about 45 minutes to an hour,
05:16 I'll taste it, strain it,
05:18 and then I'm gonna get my risotto going.
05:20 I'm taking the broth that I rinsed the rice in,
05:22 and now I'm just adding the shrimp shells
05:24 and the corn cobs for a little more depth of flavor.
05:26 I'm gonna bring this up to a boil,
05:28 and then I'll drop the heat down
05:30 and simmer it for about 30 minutes.
05:32 - I'm just gonna let the broth come up to a simmer
05:34 because we'll use it little by little
05:36 when making the risotto.
05:37 - I have my stock here,
05:38 and it's been infused with the corn and the shrimp shells.
05:41 So I'm gonna remove that.
05:42 It has this really nice sweetness to it
05:45 from the corn cobs,
05:46 and you can taste the shrimpy flavor.
05:48 - My stock's ready to go.
05:49 Looks good.
05:50 So I'm just gonna strain this
05:52 through a fine mesh strainer.
05:55 Push out any of the extra juices that might be in there.
05:58 I'm gonna season my stock with salt.
06:00 I want whatever I'm using to be well-seasoned
06:03 so that all of that flavor goes into the rice.
06:06 Mm, light and refreshing, delicious.
06:10 - So now the fun part, to actually make the risotto.
06:13 So the first step, I'm actually gonna saute my shallots
06:15 in butter and olive oil.
06:17 - There's the great debate of, do you use butter,
06:20 do you use olive oil?
06:21 Why not use both?
06:22 - I'm doing a mixture of butter and avocado oil.
06:25 The butter is, I mean, it's butter, so it's delicious.
06:28 The avocado oil will keep it from burning.
06:30 - I have some shallots.
06:32 - I use shallots because it's kind of a hybrid
06:34 between garlic and onion,
06:36 so you get the flavors of both in one.
06:37 - Some finely diced fennel.
06:39 I love the earthy, licorice flavor of fennel.
06:43 Little bit of salt.
06:44 If you could smell what I smell right now,
06:46 this is a chef's happy place.
06:47 I'm not trying to brown the vegetables.
06:49 I'm just trying to soften them
06:51 and bring out their best flavors.
06:53 - The most important thing about making a risotto
06:54 is the rice.
06:55 I feel like this is gonna be controversial,
06:57 but I'm gonna be using Bomba rice.
06:59 Because this rice absorbs more water,
07:01 it will keep my risotto from being too gummy
07:03 and it'll still be kind of firm.
07:04 - So I'm gonna take a cup of Arborio rice.
07:07 - I am using Violone Nano rice.
07:09 This is a medium grain rice,
07:11 but it's still round in shape and it's very forgiving.
07:15 - All I wanna do is toast it a little bit
07:16 so that it brings out that nutty flavor of the Arborio.
07:19 - This is just readying the rice, basically.
07:22 It's making it taste a little bit more like
07:24 the grain itself,
07:25 and it's gonna stop it from breaking apart
07:27 when I actually cook it.
07:28 - It smells perfect right now.
07:29 It's kind of nutty,
07:30 and so that's how you know when it's ready.
07:32 - A little white wine.
07:33 - I feel like you can't really go wrong
07:35 with wine and butter in general.
07:37 - And I'm gonna let that cook
07:38 until the wine fully absorbs into the rice.
07:40 It adds a nice flavor.
07:41 It helps deglaze the pan,
07:42 any bits on the bottom that are stuck.
07:45 - I'm gonna use bubbles because why not?
07:47 I love bubbles.
07:48 I love the flavor of cava,
07:50 so that is what I'm gonna use.
07:53 In the end, you'll see why bubbles go with
07:56 the particular topping that's going on to finish the dish.
08:00 So cava is basically Spain's answer to prosecco, champagne,
08:06 but it's dry, it's bubbly, it's delicious.
08:09 - I just got so excited about the wine,
08:12 I forgot to put in my aromatics,
08:14 so I'm gonna add in onions, garlic, shallots.
08:18 - You can see that it's already bringing out
08:20 some of the starches in my rice, which is great.
08:24 That's exactly what I want.
08:26 - Now that it's reduced by about half,
08:28 I'm gonna add in my stock.
08:30 - About a cup or so at a time.
08:32 - If you do it all at once,
08:33 it's not gonna absorb nicely.
08:35 - You want to continue to stir
08:36 and let the rice absorb the stock
08:40 as it needs to absorb the stock.
08:42 And as you're stirring,
08:43 you are releasing some of those starches,
08:45 and that's what is gonna give you
08:47 that velvety saturation on the rice.
08:51 - This dish is a labor of love,
08:53 but I promise you it's worth it.
08:55 That's why it costs a lot at the restaurants.
08:57 - I am gonna try this no stir method
09:00 just 'cause I don't have a lot of time sometimes.
09:02 So I'm gonna just add in most of my stock
09:04 and just save about a cup of it
09:05 and then let it do its thing.
09:07 I'm gonna bring it up to a boil.
09:09 I'm going to lower it down to a simmer
09:10 and then I'm gonna cover it.
09:11 - I have heard of the no stir method.
09:13 I have not tried it.
09:15 I would be curious to know the result.
09:17 - You know, you could just tell
09:18 that it's getting more like a porridge, if you will.
09:20 It looks creamy, classic risotto consistency.
09:23 It smells amazing, but we're almost there.
09:26 - For me, the ideal texture of risotto,
09:28 it has movement when you stir it.
09:31 And even when you plate it,
09:32 like you should plate it and it still like oozes on the plate
09:36 and then it comes to a stop.
09:37 This is looking really good.
09:39 It's super close.
09:40 I'm gonna add one more ladle of stock here
09:43 and give it a taste and see where I'm at.
09:45 Around each individual kernel of rice,
09:47 you can see that wave happening.
09:49 That doesn't make you happy.
09:53 Come on.
09:54 - I'm gonna give a little check to see how it's going.
09:56 Oh, it looks great.
09:58 It smells so good.
09:59 I'm gonna give it a little stir and shake
10:01 just to see where it's at.
10:02 Yes, and it's perfect.
10:03 It's not sticking to the bottom.
10:05 It's like nice.
10:05 All the rice is like kind of separated.
10:07 It's good. It's good.
10:10 It's almost there.
10:11 I'm gonna add in my tomatoes and corn now
10:13 and just go start cooking these down.
10:14 - Final taste, but I think we're there.
10:16 Mm, perfect.
10:19 And now for my secret ingredient,
10:21 which is actually not so secret,
10:22 but something that's totally optional, grated cheese.
10:25 - Parmigiano-Reggiano is the king of cheeses.
10:28 I am sorry, but I'm from Wisconsin
10:31 and Parm-Reg is the way to go.
10:33 This is gonna just finish off
10:35 that creaminess of the risotto.
10:36 And it's salty, it's umami.
10:39 - Give it that nice creamy texture that we're looking for.
10:41 I think that the rice is in a good place,
10:42 so I'm gonna add in the rest of my stock.
10:45 I'm gonna raise the heat up to high heat
10:47 so that I can continue to let it cook down
10:49 and reduce the amount of liquid.
10:50 And we're almost done here.
10:52 I'm gonna stir it just to make sure that nothing sticks
10:54 and all the flavors are getting incorporated
10:57 into the risotto.
10:58 This no-stir method is so quick and fast.
11:01 My risotto is already there.
11:02 It's like 10 minutes faster
11:03 than I thought it was gonna be.
11:05 - The rice is definitely cooked and al dente.
11:07 The only way to know if risotto is done is taste it.
11:11 Delicious.
11:12 - My very last step is to add in the mushrooms
11:14 and asparagus.
11:15 I want these vegetables fully incorporated into the risotto.
11:18 I love it when you get a bite
11:20 and every bite of rice has some vegetables in it.
11:23 Oh my God, this looks so good.
11:24 Guys, I'm so excited.
11:25 As you guys know, I like to eat,
11:27 so I'm gonna put a lot of it on this plate.
11:29 Come on, that looks like restaurant quality.
11:32 You kidding me?
11:33 - My risotto's about done and you can see
11:35 the rice is like nice and separated,
11:37 but still kind of like creamy.
11:38 It has such great color for the red
11:40 and the yellow of the corn.
11:42 Add a little butter for that je ne sais quoi,
11:45 that butter can only provide.
11:47 Add a little pepper,
11:48 which also just kind of adds a nice color to it too,
11:51 just another little texture.
11:52 I'm just piling on my risotto onto my plate.
11:55 I'm gonna put the shrimp on top.
11:56 I'm gonna add a little bit of the basil
11:58 to give it that nice color and also that freshness to it.
12:01 - Our risotto is done, so I wanna get it on the plate ASAP
12:05 so that you can see that movement that I was talking about.
12:08 It shouldn't just sit up like mashed potatoes.
12:11 It should flow.
12:12 If your risotto doesn't move,
12:13 it means that you need a little bit more broth to it
12:15 and don't be afraid to add some more broth.
12:18 This rice can take it.
12:19 This is where we're gonna make it seductively sexy.
12:21 So a little creme fraiche right in the middle.
12:24 I didn't finish with butter,
12:25 so the creme fraiche is acting as that extra creamy element,
12:28 but you have acid too,
12:29 which is beautiful in a dish like this
12:32 since it's so clean and fresh and delightful.
12:36 Scallops go on.
12:38 I'm doing bubbles in caviar because why not?
12:40 Osetra caviar is clean, fresh.
12:44 It has a nice little pop to it,
12:46 and it tastes like the sea, honestly.
12:48 All right, I'm gonna do a little bit of chive
12:50 right in the middle here on the creme fraiche.
12:52 Fennel frond on top of each scallop.
12:55 Oh, mama.
12:57 And then secret weapon, a little bit of fennel pollen.
13:00 Fennel pollen is actually the pollen of the fennel,
13:03 and it also adds just this kind of elegance to the dish.
13:07 - This is my risotto.
13:09 - And this is my risotto.
13:12 - This is my risotto.
13:15 - This looks so good.
13:19 It smells amazing, and I'm really hungry, so let's dig in.

13:25 Not to pat myself on the own back, but.
13:29 - All right, let's try it.
13:31 The best part of cooking.
13:32 Mm. - Mm.
13:36 Oh my God.
13:38 I've done a lot of these damn videos.
13:40 This might be my best one yet.
13:42 It's creamy, it's warm, it's soft, like I mentioned.
13:45 Woodsy and nutty and cheesy from the parm.
13:48 It's so good.
13:49 I'm gonna eat this whole plate.
13:50 - The texture of the shrimp is perfect.
13:52 You have the little pops of the corn, which is really nice.
13:55 - The cava, the fennel, the caviar, the scallops.
13:58 It builds this beautiful, light, bright, umami goodness
14:03 that you can't even make up.
14:04 And then the creaminess of the risotto
14:06 still has the al dente, individual rice texture.
14:10 It's just, it's a stunning dish.
14:12 - Risotto is a rice dish made creamy
14:16 by the method of preparation.
14:18 It's silky with a slight chew and just wonderful.
14:23 Let's see how each of our three chefs made their version.
14:25 Rice is high in starch, a large molecule
14:32 made of glucose units linked together,
14:35 classified by its size from short and medium to long grain.
14:38 John used Arborio, a superfino or high quality Italian rice.
14:42 Arborio is a medium grain specialty rice
14:45 that's two to three times as wide as it is long.
14:48 Arborio releases some of the starch into the broth
14:52 while also absorbing some of the flavor of the broth,
14:55 thickening it to the consistency of a sauce.
14:57 John toasted his rice in olive oil and butter.
15:00 Lish lightly toasted her rice
15:02 until it had just a hint of color.
15:04 The lipids coat the rice grains,
15:06 keeping them separated as broth is added.
15:08 As starch browns, it breaks into smaller units of glucose,
15:12 making it slightly sweet.
15:13 John used hot broth and added it gradually to his rice.
15:17 Adding hot stock one ladle at a time
15:20 continues the gradual cooking process
15:22 and coaxes more starch out of the rice,
15:24 thickening the broth and making it creamy.
15:27 Diane didn't use the traditional risotto method.
15:29 Instead, she soaked her rice in cold stock to extract starch
15:34 and only stirred occasionally during cooking.
15:36 Constant, patient stirring causes friction
15:39 between the grains and encourages rice starch
15:42 to slowly release into the broth
15:44 for a creamy and luxurious sauce.
15:46 Only occasional stirring, however,
15:48 causes some of the rice to stick and break apart,
15:51 so it's still thick, but less creamy and decadent.
15:55 After toasting, all three chefs added a splash of alcohol.
15:59 The acid in Lish's wine causes partial hydrolysis
16:02 of the starch molecules into smaller glucose units,
16:05 so there's even more sweetness here in her risotto.
16:08 [dramatic music]
16:10 John added asparagus and cremini mushrooms.
16:15 Creminis are earthy and savory,
16:17 and really, just white or portobello mushrooms,
16:20 picked at a different stage of ripening.
16:22 Diane added shrimp, corn, and tomatoes.
16:24 It was really mouthwatering,
16:26 with the corn adding a pop of sweetness
16:28 and a textural contrast from the soft risotto.
16:31 Lish added seared, dry-pack scallops.
16:33 Dry-pack have a more concentrated, sweet flavor
16:37 from higher glycogen content
16:38 compared to water-plumped, wet scallops.
16:41 Lower water content of the dry scallops
16:43 makes searing them more efficient.
16:45 We're talking about maillard browning here,
16:47 which happens more quickly with lower moisture content.
16:50 Risotto is a meal and a cooking method all in one.
