*Important Note*: This only applies to the Java Edition's Version of the Wither, he's more annoying on Bedrock Edition and will kill you if you have no Armor on, even on Easy.
But so, yeah I know you can trap it in the Bedrock, but that's kind of lame and it may depend on my Challenge Runs, plus I'm just some unfrozen Neanderthal and in dire need of rocks.
By digging a long 1x2 tunnel underground, avoiding big caves or even zones of interest like Amethyst Geodes and maybe having to block off some of the smaller caves, you can easily kill the Wither with a Stone Sword, or even a wooden one, and all without Armor and on Hard Difficulty, you may not even take any Damage! Simple as that. While I did this in the Overworld, I think you could do it in the Nether and The End too, but then you'd have to watch out for Lava and the Void, that might be a bit too much to worry about.
At least you'd be able to give the Wither a one-sided fight instead of none at all, and to be fair, you also get to have a nice, big tunnel that the Wither carves for your projects, plus all those delicious rocks it drops in the process.
