00:12 The process is very easy, straightforward,
00:15 just like any soup.
00:16 It's all about the ingredients.
00:17 Let's go.
00:18 Add in some olive oil.
00:19 Gonna go ahead and add my garlic
00:21 so that it infuses that oil as it heats up.
00:24 Once that heats up, I'll add in my onion
00:26 and then celery and carrot.
00:27 All good soups, we know, start with this combination
00:30 known as the mirepoix.
00:32 This is the perfect soup to make in the new year
00:34 when you've got all those resolutions to eat healthy
00:36 because it is super healthy.
00:37 What makes minestrone different than other vegetable soups
00:40 is that vegetable soup typically just has
00:42 vegetables and broth, but minestrone is bulked up
00:45 with the pasta and the beans,
00:47 again, making it just a really hearty meal.
00:49 Now that my veggies are all soft and ready to go,
00:52 I'm gonna deglaze with a little bit of red wine
00:55 and then add in some stock, water, and tomato sauce.
00:59 We're thinning out that tomato sauce
01:01 to make it like a tomato broth.
01:02 This is gonna give so much flavor to the soup.
01:05 Smellin' good.
01:06 Now I'm going in with the beans,
01:08 all that zucchini, green beans, and some spinach.
01:13 All these veggies are gonna release some water as well
01:16 and so much flavor to the broth,
01:18 so we're making like a veggie broth also.
01:20 It smells so good already.
01:22 Adding a little more flavor with some fresh oregano,
01:25 fresh basil, and a little salt and pepper.
01:27 So that's it, I'm just gonna let it simmer
01:30 'til all those veggies are nice and tender.
01:32 You can use whatever small pasta you want.
01:34 I'm using little baby seashells.
01:36 I've cooked my pasta, so the recipe suggests
01:38 that you just put a little bit of the pasta
01:41 into your bowl and then ladle the soup right over it.
01:43 If you're gonna serve it immediately,
01:45 you can stir the pasta directly into the soup,
01:48 which is what I'm gonna do.
01:49 The way you finish this off is with a generous grate
01:52 of Parmesan cheese, some cracked pepper.
01:55 I'm also gonna add in a little fresh basil,
01:57 a little drizzle of extra virgin olive oil.
