00:07 I really like eating bread, so yeah, it all came from that. I just wanted to learn how to make bread and to make more and more bread.
00:16 So then it just wasn't feasible for me to eat all the bread I wanted to bake. And I think it just developed from there.
00:23 You know, I started baking for friends and neighbours and yeah, it just grew quite organically.
00:29 It's now been seven years I've been doing the micro bakery. I started initially, it was just a part-time, so I had a full-time job.
00:38 And since I moved to Wakefield, the last almost three and a half years, I think, I've been doing it full-time.
00:45 It's really nice. You know, I've got most of my customers are repeat customers every week coming back.
00:52 Some of them have been with me since the beginning. And it's really exciting to be able to work closely with the farmers and millers in Yorkshire,
01:01 which in London at the time wasn't possible. So that's something that makes it really rewarding to work in this region.
