01:10 The New Greenland Community Model Farm here in the new island, Quezon City.
01:20 I'm with Muena, one of the hardworking farmers here,
01:24 who served as my tour guide in this 7-hectare urban farm
01:28 that was built in 2021 to serve as the vegetable capital of the city.
01:33 Cabbage, squash, there's petchay, there's spinach.
01:41 What else did I see there? You have tomatoes there, right?
01:48 With the help of the farmers here,
01:51 the community of residents of the new island got regular fresh food
01:57 and of course, livelihood for the urban farmers who work here.
02:02 So one of the things we harvested earlier is their spinach.
02:14 And you'll notice that wherever you go to the pizza place,
02:17 this flavor is already there.
02:19 We'll make spinach pizza.
02:21 We'll make our own dough from scratch.
02:28 So this is our all-purpose flour.
02:30 So let's start with our dry ingredients.
02:33 We'll also add in some salt.
02:36 Of course, our flour already has its natural sugar.
02:43 But to make the dough rise faster, let's add a little sugar.
02:48 And then finally, our yeast for our dry ingredients.
02:52 Let's add water.
03:08 If your mixture or dough you're making has an oil-based or fat ingredient,
03:14 I would suggest that you add it last.
03:17 In this case, we added the water first.
03:20 Then we'll let the all-purpose flour absorb the water before you add the oil.
03:26 Because what will happen is it won't be totally absorbed if you add both liquid ingredients at the same time.
03:35 This is what we call the autolyse process in baking.
03:40 You'd normally want to let it stand for at least 30 minutes
03:44 so that the particles or the pieces of our all-purpose flour will be totally hydrated.
03:51 Once you're happy with your dough,
03:53 you'll think that your dough is fully hydrated,
03:56 then we'll add our fat or in this case, our olive oil.

04:13 While the dough is resting, let's prepare our sauce.

04:21 We'll remove the stem from the leaves.
04:24 We'll also heat up some water to blanch it.
