00:02 and I'm making homemade gnocchi
00:04 that is so much better than anything you could find
00:06 in a grocery store.
00:07 If you've ever wanted to make homemade pasta before,
00:09 gnocchi is where I would start.
00:11 It's almost impossible to mess up
00:13 and you most likely already have
00:14 all the ingredients on hand.
00:15 For gnocchi, I like using russet potatoes
00:22 because they are really, really starchy,
00:24 which just gives you a great end result.
00:26 I also like to roast my potatoes
00:28 rather than boil them for the gnocchi.
00:30 Boiling them typically just makes them a little more watery,
00:33 which means you need more flour to make it,
00:35 and I think you get a better result with roasting,
00:37 but if you absolutely must boil them
00:39 because it is a little bit quicker,
00:41 keep them whole and boil them that way.
00:44 After you've washed your potatoes well,
00:45 poke them all over with a fork
00:47 to let steam escape while they're roasting.
00:49 You don't need to worry about wrapping these in foil
00:51 or anything like that.
00:52 You can place these directly on the rack in your oven
00:54 and bake these at 400 degrees for about an hour
00:57 until a knife inserted into the middle goes in easily.
01:01 Once your potatoes come out of the oven,
01:02 let them cool down until you can safely hold them
01:04 in your hand and handle them easily,
01:07 and then cut them open,
01:08 scoop out all of the insides into a bowl.
01:11 You can get rid of the skins.
01:12 We don't need them.
01:14 And then run your potatoes through a ricer.
01:16 If you don't have a ricer or you've never used one,
01:19 I love them for using them on potatoes.
01:21 They make the best mashed potatoes.
01:24 It's how you can get really smooth, light,
01:26 fluffy mashed potatoes.
01:28 Now that all of your potatoes are riced,
01:30 add in your eggs, flour, and salt,
01:33 and mix that just until a dough forms.
01:35 Once your dough starts to form together
01:37 and it starts forming clumps
01:39 and can stick together easily,
01:40 that's when you wanna dump it out onto the counter
01:42 and finish kneading it into one smooth ball.
01:44 At this point, you might be tempted to add more flour in,
01:47 but really see if you can get away
01:49 with not adding any extra.
01:51 The more flour you add, the tougher your gnocchi turns out,
01:54 and obviously the less flour you have,
01:56 the softer it will be,
01:57 and we want really soft, fluffy gnocchi.
01:59 Once your dough comes together,
02:01 it's time to shape our gnocchi.
02:02 So divide your dough into four equal pieces,
02:05 and then working just one at a time
02:06 to make it a little easier,
02:08 roll out each piece to be about a half of an inch thick
02:10 into a long rope,
02:12 and then cut individual pieces of gnocchi
02:14 about one inch long.
02:15 After you've cut all of your gnocchi pieces,
02:17 roll them in semolina flour on a sheet tray,
02:20 and then to get those really iconic ridges of a gnocchi,
02:23 we're gonna roll one on the back of a fork.
02:25 After you've rolled all of your gnocchi,
02:27 bring a pot of salted water to a boil,
02:30 place in your gnocchi just in batches,
02:31 and cook it off for about two to three minutes
02:33 until they start to float to the top.
02:35 They should look puffy and a little bit swollen,
02:37 just like a dumpling.
02:39 Once your gnocchi is done boiling,
02:40 add it directly into whatever sauce you wanna serve it with,
02:43 like a pesto or a marinara.
02:44 We made a really easy brown butter sauce for it.
02:47 Oh my gosh.
02:52 It's so soft and pillowy,
02:54 just like a fluffy dumpling.
02:56 These are so incredible.
02:58 They're perfectly al dente
03:00 with just like a little bit of a chew to it.
03:02 I even cannot believe how easy this gnocchi is to make.
03:05 Other than like roasting your potatoes,
03:06 you have fresh pasta made in like under about 40 minutes.
