00:00 Our Filipino Christmas food can also be mixed with food.
00:04 In 2018, Naimelda's online business started.
00:09 She sells Chinese dishes using her mother's recipe.
00:14 Most of the dishes we make are for big family events,
00:19 like Grandma's birthday, Chinese New Year, or Christmas.
00:22 Those are the type of dishes that normally,
00:25 you would eat at a large Chinese restaurant, like a 12-course meal.
00:31 Or, Grandma or Mom would make it.
00:33 But it really takes them 2 to 3 days to create those dishes.
00:37 And the star of their best-selling dishes is chestnuts.
00:43 We add chestnuts because it has texture and flavor.
00:47 You'll notice that it's a bit sweet.
00:50 So, it really adds to the final product of the dishes.
00:55 Even though they sell this all year round,
00:58 the number of orders increases when there's an occasion,
01:00 like Christmas and Chinese New Year.
01:03 Just like one of their most popular dishes,
01:06 pork knuckles, which is boiled for almost 4 hours.
01:10 The Chinese believe that pork knuckles are a symbol of prosperity.
01:15 You'll be rich.
01:16 On the other hand, the chestnuts mean you'll be full.
01:23 It costs Php 2,080.
01:26 And the whole cooking process takes up to one and a half days.
01:31 And now, we have Chef Beverly with us.
01:37 She'll teach us how to cook
01:39 Pork Knuckles Braised for 4 Hours with Chestnuts.
01:45 The ingredients are ready, so let's get cooking!
01:49 First, we'll add a bit of oil.
01:51 Turn up the heat a bit.
01:54 And then, for seconds, we'll put the pork knuckles.
02:01 Cook the pork knuckles in oil for one minute each side.
02:06 After we're done, we'll really be amazed.
02:08 We'll wait for 4 hours before we can taste it.
02:12 Next, add the soy sauce, oyster sauce, cloves, anise, cinnamon,
02:17 crystallized sugar, onion leeks, sesame oil, and water.
02:21 If you marinate the pork knuckles overnight before boiling for 4 hours,
02:26 the taste will be more intense.
02:29 So here it is, Chef.
02:30 It's already cooked.
02:31 It doesn't need to be cooked.
02:32 Very low heat.
02:33 And we'll start waiting.
02:37 The long wait is over.
02:42 Here it is, Chef.
02:43 After 4 hours, we'll open it.
02:46 There.
02:47 We'll add the shiitake mushroom and of course, the chestnuts.
02:51 Let it boil for a few more minutes and voila!
02:54 The pork knuckles braised for 4 hours with chestnuts is now cooked.
02:59 There are two ways to eat this.
03:02 You can put it in a kuapaw or a bread.
03:06 And it's also okay because rice is life, us Filipinos.
03:11 Rice and our dish.
03:14 I'll put this in the bread first.
03:18 You can add the side dishes here.
03:23 This is fermented mustard, or kiamtay,
03:27 bonsoy, and roasted peanuts with sugar.
03:32 Let's try it.
03:33 The burst of flavor inside the mouth is beautiful.
03:42 You can taste the pork, the marinated pork knuckles.
03:47 The chestnuts, even if it's cooked, it still has a bit of crunch.
03:51 So when you bite it, it's delicious.
03:53 I'll try it if I'm just going to make it into a dish.
03:56 Rice.
03:57 So I want to get all of it.
04:00 This bok choy, I love bok choy.
04:03 Let's put it all at once.
04:04 Here.
04:05 The chestnuts.
04:08 Here it is.
04:11 Merry Christmas!
04:13 It's delicious to mix chestnuts and make it into a dish.
04:24 Because if it's just plain, we already know the taste.
04:27 But because of the chestnuts, the taste of this dish totally changed.
