Lost Burro is a Chef driven food truck that offers tacos and stuff. From our PapaNachos to our house made Strawberry Horchata we take pride in creating new and fun ways to enjoy the very popular Mexican cuisine. We offer a wide selection of plates for our guests that everyone in the family can enjoy. Creating everything from scratch separates us from the rest. We have daily specials that include Torta Thursday, Lost Dog Wednesday and Taco Tuesday. Unless we are at events you can find the Lost Burro food truck on the corner of 83rd Ave and Peoria right in front of Arizona’s Finest Pawnshop. Open Tuesday through Saturday from 11am till 10pm. 00:11 Eduardo, you are the founder, the owner, and Ricardo, you are the co-owner and the head

00:19 Eduardo, first of all, tell me about Lost Borough and how you kind of came up with this
00:23 idea.
00:24 So we're a little chef driven food truck.
00:26 We couldn't really go straight into brick and mortar.
00:28 So how can we bring a high quality food into the public and have everybody be able to afford
00:32 to eat it?
00:33 So we thought Mexican food and we just put a lot of twists, a lot of creative French
00:37 techniques that we've learned in our career and we implemented into every one of our dishes.
00:42 Did you say you put French techniques into Mexican food?
00:45 Yeah, we have confits, we've emulsified a lot of things.
00:48 Everything is made in house from scratch except for a couple of chips, the French fries.
00:52 We wanted to make the French fries but people wouldn't appreciate it at a food truck.
00:56 And the tortillas for now.
00:57 We are coming up with our own secret kind of recipe for a corn tortilla that nobody
01:01 else I think is doing.
01:02 So I'm hoping to put that out soon to the public.

01:07 But Ricardo, tell us about what we have on the table today.
01:09 We have a little bit of everything.
01:11 We try to get a variety on the table.
01:13 Our first plate would be our bowl.
01:15 So it'd be bottom with Mexican rice, some pinto refried beans, and then our special
01:21 cremas that we make in house.
01:23 Delish.
01:24 And our pastor, like I said, with pineapple and cilantro on top.
01:27 Yes, we have some tacos there.
01:30 Tell me about these tacos over here.
01:31 That would probably be one of our specialties.
01:33 That's very popular.
01:35 We have the quesadillas and that comes with its own side of bone marrow broth.
01:39 Wow.
01:40 Crispy tortillas.
01:41 You know, we got our onion and cilantro, our braised beef.
01:44 That's very popular.
01:45 So you dip those tacos then into the bone broth.
01:48 Oh man, I love that.
01:50 And then tell me about that burrito there at the end.
01:51 Burrito, that's another favorite of the people.
01:53 We have our California burrito.
01:55 We had our own little twist.
01:57 I think we have carnitas in there with our red pickled onions, some crispy french fries,
02:03 and a nice crispy tortilla wrapped around.

02:08 But Eduardo, tell me a little bit about the name.
02:11 Why Lost Burro?
02:13 So at first we didn't really know.
02:14 I wanted it to be funny.
02:15 I wanted it to be a little creative.
02:17 And it's funny, now that I really think about it, when I was making these dishes, my parents
02:20 were just like, "This is not traditional Mexican food."
02:23 Sure.
02:24 And then they told me, "Estas perdido.
02:25 You're lost."
02:26 And then with that, we kind of came up with the Lost Burro idea because they thought it
02:29 was funny.
02:30 I think it's hilarious.
02:31 And I think it's very unique, too.
02:32 It's something that people are going to remember.
02:34 So you guys are going to be out on Saturday, November 4th for the 17th annual Fall Fest.
02:40 Tell me a little bit about that and working with Local First.
02:42 So this is our first year with Local First.
02:44 They found us and we had to do some classes.
02:46 We learned a lot.
02:47 Even my chef career, there's stuff that I didn't know about running a business that
02:51 they showed us, they taught us.
02:53 And they're a resource that we've utilized a lot.
02:56 And since then, they've reached us out for a couple events, a couple other catering things,
03:01 and we've grown as a business with them.
03:02 That's really awesome.
03:03 Well, other than that upcoming event, where can people find you?

03:13 So we're very flexible.
