00:03 I'm sorry.
00:06 Hi, I'm Sherry.
00:07 I'm the lead brewer here at Capital Brewing Company.
00:09 And we're going to talk about the brewing process.
00:12 So we start with milling.
00:16 We'll mill our grain.
00:18 And that just cracks it open and exposes the starch inside.
00:21 And the very first step of the process is mashing in.
00:24 So the mash is mixing that grain with hot water.
00:29 And that's basically just going to extract your sugars
00:32 from the grain and leave you with what's called wort.
00:35 Wort is basically sugary water.
00:37 And so from the mash, we go into the kettle.
00:40 That's where we boil.
00:41 That's where we'll add a lot of the hops or your adjuncts,
00:44 which is flavoring.
00:46 And then we go into the whirlpool.
00:49 So the whirlpool is basically another opportunity
00:52 to add hops, but that'll be more flavor and less bittering.
00:55 And you're going to separate your solids from the liquid.
00:58 So you want that flavored wort.
01:00 That's going to then go into the fermenter.
01:02 You don't want any of the solids.
01:04 So you go into the fermenter.
01:05 And that's where you're going to chuck in your yeast.
01:07 And from day one, it'll start fermenting straight away.
01:12 And depending on the beer, about two weeks later,
01:15 you've got a delicious brew.
