Butterfly chicken is a technique used to prepare a whole chicken for cooking where the backbone of the chicken is removed so that the chicken lies flat – resembling a butterfly shape. This allows the chicken to cook more evenly and quickly, and also makes it easier to carve.

To butterfly a chicken, you will need a sharp knife and a pair of kitchen shears. Start by placing the chicken breast side down on a cutting board. Using the kitchen shears, cut along each side of the backbone, starting at the tail and working your way up to the neck. Once the backbone has been removed, you can flip the chicken over and press down on the breast bone with the heel of your hand until it breaks. This will help to flatten the chicken.

Once the chicken is butterflied, you can season it with your favorite herbs and spices. You can then roast the chicken in the oven or grill it over medium heat. Butterfly chicken is a versatile dish that can be served with a variety of sides.
