00:18 Today we're cooking up some Chinese style wings
00:20 on the grill and it's real easy to do.
00:22 Alright, here I've got some fresh washed chicken wings
00:25 ready to go.
00:26 There's a few pounds there.
00:28 And it's a real easy recipe.
00:30 You're gonna need jalapeno for this.
00:32 You're gonna need some ginger.
00:34 You're gonna need some green onion.
00:37 You're gonna need some garlic.
00:40 You're gonna need some Asian BBQ sauce.
00:43 It's called Hoisin sauce.
00:46 You're gonna need some rice wine vinegar.
00:49 You're gonna need some soy sauce.
00:51 So let's just put it together and it's real easy to do.
00:54 Alright, I'm gonna chop up some veggies first
00:56 and you don't need to see how to do this.
00:58 So we'll just get these done first.
01:01 Alright, through the miracle of time,
01:05 the veggies have been chopped.
01:08 Now let's put this sauce together, alright?
01:11 It's real easy.
01:12 You're gonna need a half a cup of rice wine vinegar.
01:16 Now if you can't find rice wine vinegar,
01:18 you could substitute a good table vinegar.
01:22 You're gonna need a half a cup of soy sauce.
01:26 Now if you've never cooked up some Asian style wings
01:29 at your pit, you're missing something out of your life.
01:32 You better check this out.
01:33 Alright, now here I have two tablespoons
01:36 of Chinese dipping sauce.
01:38 It's called Hoisin sauce.
01:40 And to that I'm gonna add one tablespoon of minced ginger,
01:44 one tablespoon of scallions,
01:47 one seeded chili pepper,
01:49 and one tablespoon of minced garlic.
01:53 Give it a mix.
01:54 And now the sauce is ready for our wings.
01:58 Easy enough.
02:00 Man, that smells good.
02:02 Alright, our marinade and mopping sauce is done.

02:15 Man, this is some real good eating, man.
02:17 Alright, now, next thing we're gonna do here
02:19 is we're gonna prep these wings a bit.
02:21 Like I said, these wings are already washed and prepared.
02:25 And what I like to do here is we're gonna
02:27 snap the drumette just a little bit.
02:30 We're just gonna straighten it out.
02:31 This helps it when we're ready to put this on the skewers.
02:36 Just grab it and you kind of break it.
02:40 Now you don't have to break it all the way through.
02:41 The whole idea is you want to straighten these wings out
02:44 just a little bit.
02:46 Alright.
02:47 There's a few in here.
02:49 Now you're gonna want to make a lot of these wings
02:51 because they go real fast at your pit.
02:54 Alright.
02:59 Easy enough.
03:01 Now we're gonna take this marinade here.
03:05 We're gonna pour a good bunch of it
03:06 all over these wings just for a bit.
03:08 We're gonna save some for mopping.
03:11 Give it a good mix.
03:13 Now some will tell you to throw these
03:17 in the refrigerator overnight.
03:18 I don't know what they're thinking.
03:20 Their idea here is to create layers of flavor.
03:23 Chicken wings contain some real good tasting chicken.
03:27 You don't want to marinate it overnight.
03:29 Just an hour at the most.
03:31 In fact, sometimes you don't even have to marinate at all.
03:33 We're just gonna get some flavors in there.
03:35 If you marinate it for too long,
03:37 all you're gonna do is taste your marinade.
03:39 What good is that?
03:40 Alright.
03:41 Now we're gonna put these wings on the skewers.
03:45 What you do here is you start at the drumette end
03:50 and you take these skewers and you just drive it
03:53 right up along the bone.
03:55 You can feel along the bone there with your skewer.
04:00 You just want to be real careful you don't stab yourself.
04:04 Now we've all stabbed ourselves and it can hurt.
04:06 So you just be careful doing this.
04:10 For those who haven't done this before,
04:11 I'm gonna show you a few more times.
04:14 Again, go right alongside the bones there.
04:19 Just like that.
04:21 Now the great thing about this recipe here
04:23 is it's real quick and easy to do.
04:26 It's perfect for tailgating or something to eat
04:29 after you get home from work, family picnic, whatever.
04:34 You want to make a bunch of them like I said.
04:38 Alright.

04:49 Alright, there's nothing left to do now
04:52 but put these on the fire.
04:54 Now we've got a medium heated fire
04:56 and we're gonna do it directly over the coals.
05:01 Like I said before, these are only gonna take
05:02 a few minutes to do.
05:04 The trick is you want to be mopping and flipping.
05:14 Yeah.
05:15 Oh yeah.
05:19 Now you're gonna take your mopping sauce here
05:23 and keep hitting.
05:25 That's the trick.
05:38 Keep that mopping sauce coming along there.
05:42 Keep flipping those wings.
05:45 Whoa.
05:45 I think you get the picture.
05:49 You getting hungry or what?

06:05 Alright, these wings are done.
06:18 It's only taken a few minutes
06:20 and we're gonna place them indirect here
06:23 to keep them nice and warm
06:25 for your friends that are at the pit.
06:27 Alright, and we're gonna keep adding
06:29 some more wings on there.
06:30 Same procedure.
06:31 Get 'em over that medium cold.
06:34 Start hitting with the mop.
06:40 Man, they smell so good I can hear the food police coming.
06:44 Get that mop coming.
06:56 Give 'em a flip.

07:04 Now of course we could have shortened this video a bit
07:14 but I kinda like doing this.
