How To Make Spicy, Bacon & Tomato Pasta Recipe - Orange County Cook

00:06 Hey guys, we're going to make a really awesome pasta dish.
00:09 It's going to be a kind of chilli bacon tomato sauce to go with some linguine.
00:14 What we're going to do is we're going to sweat up some onions and some celery.
00:18 We've also got some lovely hickory smoked bacon, so you've got that lovely smoky flavour going in there.
00:24 And then we're going to add some tomatoes, some garlic, a little bit of basil, a little bit of parmesan to finish off.
00:29 And we've got a really great, simple, affordable and most importantly, delicious week time, well week evening meal.
00:40 Although it's good any time.
00:42 Anyway, let's get into it.
00:43 The pasta on the boil over here.
00:46 I've got some linguine and we've got that.
00:48 We've put some salt in there and in it goes.
00:51 Right, let's get the vegetables done.
00:53 We're going to cut the onion in half, trim off that end and then we're just going to peel.
01:04 Then what we're going to do is we're just going to slice a couple of times across the top there and down.
01:13 And then we're going to go down the side like this and we're going to make a nice little dice.
01:22 Do the same with the celery.
01:24 I've just got a stick of celery and what we want to do is just cut it into nice small pieces.
01:32 Because it's going to make up the sauce but we don't want big chunky pieces of celery.
01:40 And I've also got this lovely smoked bacon and it's smoked with hickory so it's got this lovely flavour to it.
01:46 So what we're going to do is cut this into lardons, so just small pieces like this.
01:55 Right, let's get cooking.
01:58 I've got the pan on.
02:01 I'm basically going to get that nice and warm and then we'll add some olive oil.
02:09 Then we've got our celery and our onion so let's get those in and we're going to start sweating those down.
02:16 Let's just add a little bit of salt here.
02:23 And we'll give it a shake.
02:27 These are looking great, let's get the bacon in.
02:38 The fat's starting to come out of the bacon.
02:40 It smells amazing in here.
02:43 So we're going to let that cook.
02:45 It's probably going to take about 5-10 minutes.
02:47 I want to do it slowly so we get all that lovely flavour out.
02:50 In the meantime I need to crush some garlic, get some chilli flakes ready and we'll open the tinned tomatoes.
02:58 It's been about 10 minutes.
03:01 Come and have a look at this, you're going to see that everything's starting to get lovely golden and brown which basically means loads more flavour.
03:11 That's what we want.
03:13 We're going to add some chilli flakes here, so I'm just going to use about that much.
03:22 I've got a couple of cloves of garlic, we're going to get those in.
03:29 One of the things you should do with garlic when you're cooking it, is put it in like this.
03:39 You start to smell it, it's time to add some liquid.
03:42 So we've got our tinned tomatoes and before I add in the chunks I just want to add in the tomato juice.
03:56 Man that smells amazing.
04:00 Ok, now I'm going to take the tomatoes and I'm literally just going to use my hands and we're going to basically rip them into nice pieces.
04:17 I'm going to crank the heat up on this and I'm going to cook this.
04:21 We're going to cook it on a medium heat, probably take about 10-15 minutes until all the water has boiled off and it's reduced down and we've got this lovely intense flavoured tomato sauce.
04:32 Right, this has thickened up really nicely and what's the most important thing? Taste, taste, taste.
04:38 So let's grab a spoon.
04:43 That is really amazing and that little bit of salt we put in at the beginning, that doesn't need seasoning at all but we will check it once we put the pasta in.
04:57 The pasta's cooked, in fact it's been done for quite a while because I've been messing around with this so it might look a little bit overcooked to you but don't worry about it, let's pretend it's absolutely perfect.
05:10 Right, so we've got our tongs and we're basically going to just drain that a little bit and straight into the pasta.
05:22 Always add the pasta to the sauce, that's the rules, don't mess with the rules.
05:28 Let's plate this bad boy up. Ready?
05:32 Oh look at that. That just looks amazing.
05:41 Bit of parm over the top.
05:44 I've got some basil which we're just going to tear up, scatter over.
05:49 And that is linguine with bacon, tomato and chilli pasta sauce. Let's give it a try.
