Learn how to make Spaghetti Pasta in Basic Tomato Sauce from our chef Smita Deo on Ruchkar Mejwani. This is a homemade Italian vegetarian pasta recipe where boiled spaghetti is tossed in tomato sauce prepared from tomato puree and aromatic herbs.

Ingredients:

For The Sauce
6 tomatoes blanched and pureed
1 red bell pepper
1 tbsp of garlic paste
4 tbsp olive oil
1 tbsp oregano
1 tbsp chilli flakes
1 tbsp tomato paste
½ cup finely chopped fresh basil
½ cup fresh cream
½ tsp pepper powder
Salt to taste
½ a packet of spaghetti

Method:

- Apply little oil to the bell pepper and roast it till almost charred remove the charred skin and puree it.
- Heat oil and add the garlic and once it turns golden add the oregano, chilli flakes and the bell pepper puree. Sauté for a few seconds.
- Add the tomato puree, the tomato paste and sauté for 7-8 minutes.
- Once the oil floats add the pepper powder, salt and bring the sauce to a boil.
- Get the sauce off the flame and add the cream and mix well
- Boil 2 litres of water with 2 tbsp of water and add the pasta and boil till the pasta is ¾ th done i.e Al dente. And then add to the sauce and serve with warm garlic bread.
