Ingredients for two pizzas with diam. of 30 cm:
For the spinach pizza dough:
500 g flour
7 g of dry yeast (one sachet) or 25 g of fresh yeast
380-300 ml hot water
2 teaspoons of salt
5, 6 tablespoons of oil (olive)
150 g spinach boiled and pureed or very finely chopped
For the filling:
1 red onion
2 cloves of garlic
1 red donut
50 ml olive oil
200 g plain tofu, in brine (natural)
100 g chickpea hummus
300 g vegan cheese: 150 g slices with coconut oil + 150 g slices with almonds
120 g cherry tomatoes
2 teaspoons pizza spices (or just basil and oregano)
Method of preparation:
The pizza dough is prepared first, of course I put everything in the bowl of the robot, in the order in which they appear above, in the ingredients, but it is a very easy dough to make, not pretentious, which you can also make by hand.
If you have fresh yeast, use it with confidence! The only difference is that the fresh yeast must "grow". Mix it, therefore, in a small bowl with 1 teaspoon of sugar and 2, 3 tablespoons of warm water, sprinkle a little flour and leave to ferment for 10 minutes. This is called "maya"
Dry yeast, on the other hand, does not need all that, but is mixed directly with the flour.
So, for the dough, we mix flour with dry yeast or mayo, oil and salt. Let it knead a little, then add warm water (if it's cold or hot, it will "kill" the yeast). At the end, add the spinach and knead for a few minutes.
Leave the dough to rise for approx. 40 minutes in a warm, covered place, after which it is divided into two balls (we do this with oiled hands).
Grease the pizza pans with a little margarine (if we grease them with oil, the dough will be difficult to spread); the dough is then spread in trays, leaving the edge a little thicker. It is left to ferment until we prepare the "filling".
Also now, we will also heat the oven (the oven should be set to maximum, on high heat).
Next, chop the onion with the garlic and the donut and saute in the olive oil. Then add crumbled tofu and hummus. Cover the dough from the two trays and bake at once for 10 minutes.
At the end, put the cheese (of both kinds), broken into pieces, and the sliced tomatoes.
Sprinkle the spices for the pizza and leave to bake for another 10-15 minutes.
It turned out incredibly tasty!!!
