Vegetable curry is suitable for lunch or dinner. This coconut milk soup can be an alternative when you run out of ingredients. Especially the main protein such as meat, chicken, or eggs. Curry vegetables are cooked without meat at all. The only ingredients used are potatoes, beans, carrots, and cabbage left in the refrigerator.

Vegetable Curry Recipe
Materials:
100 grams of carrots
1 potato
100 grams of cabbage
50 grams of chickpeas
800 ml thin coconut milk
1 segment of galangal
2 bay leaves
1 lemongrass stalk
1 scallion
1 tsp salt
1 tsp mushroom broth
1 tsp sugar
1 tsp pepper powder

Ground spices:
8 cloves of red onion
5 cloves of garlic
3 hazelnuts
1 segment of turmeric
1 piece of ginger
