Vegan Laksa Curry Recipe - 15 MINUTES RECIPE

Laksa is a spicy noodle soup popular in the Peranakan cuisine of Southeast Asia. It's usually cooked with chicken, prawn or fish, But here I'm gonna show you how to make vegan laksa soup that tastes as good as the regular laksa.
What I like about this laksa noodles soup is the simplicity and easy to make even for amateur cooks.

This easy laksa at home is served in spicy soup based on spicy curry made with coconut milk which makes it taste so full of flavor. I'm using vermicelli noodles and regular noodles, but you can use either one to make this vegan laksa soup.
Feel free to add more vegetables of your choice, such as, spinach, pepper, carrots, tomatoes, etc.

To make this easy laksa noodle, you'll need :
1 tsp cumin
1 lemongrass
40 gr ginger
1 big red chili
1 bird’s eye chili
3 shallots
2 garlic cloves
1/2 tsp coriander
1/2 tsp turmeric powder
40 gr roasted cashew
oil
2 lime leaves
50 gr enokitake
350 ml water/vegetable stock
1 tbsp soy sauce
salt and pepper
fried tofu puffs
120 ml of coconut milk
100 gr blanched broccoli
1/2 tsp brown sugar
noodles and vermicelli
beansprouts

for garnish :
fried shallots
lime
coriander
