Why Chicago loves Garifuna Flava's jerk chicken

Garifuna Flava is a Belizean restaurant on Chicago's Southwest Side famous for its jerk chicken. The restaurant is known for its blend of Caribbean, Latin, and Belizean cuisine, with dishes like red snapper, panades, and stew beans and pigtail. The Castillos came to Chicago from Belize in 1986. In 2008, they opened Garifuna Flava. The Castillos trace their own ancestry to the Garifuna people, who come from Central America and trace their ancestry to two Spanish slave shipwrecks in the West Indies. Today there are only about 500,000 Garifuna left, and the Castillos are working to keep the culture alive through the food.
