for chicken marination

5​ Biryani Masala​ 2 tsp

7​ Lemon Juice​​1 tblspn
8​ Curd​​​ 1 cup
9​ Ginger Garalic Paste ​2 tbspn
10 ​Mint Leaves ​​15 nos
11​ Ghee​​​ 3 tblspn
12​ Chop Coriander​ 2 tblspn
13​ Fried Brown Onion ​30 gm
14​ Oil​​​ 2 tblspn
15​ Green Chilli ​​3 nos

Rice Preperation
1​ Ghee​​​3 tbspn
2​ Bay leaf​​2 nos
3​ Green Cardamom​2 nos
4​ Black Cardamom​4 nos
5​ Star Anise​​1 nos

7​ Caraway Seed​​1 tsp

Biryani masala home made
Jeera 1/2 tsp
Sahi jeera 1/2 tsp
Tej patta 4 nos
Laung 4 nos
Choti elaichi 3 nos
Badi elaichi 2 nos
Dalchini 1/2 inch
Chakri fool 1/2 ps
Kali miri 5 nos
Akkha dhaniya 2 tblspn
aniseed 1 Tspn

For Dum Assembling
​ ​
1​ Marinate Chicken​
2​ Half Cooked Rice​
3​ Brown Oinon​​3 tblspn
4​ Turmeric Liquid​3 tblspn
5​ Mint Leaves ​​10 nos
6​ Coriander Chop​2 tblspn

Method

​ ​
1 ​Soak Rice well before Preparation (1 hr) ​
2​ Take Thick Bottom Pan for marinating Chicken​
3​ Mix the entire ingredient together from the list​
​Of chicken marination and leave it for 40 min​
4​ Take another pan for cooking rice Add ghee in ​
​thick bottom pan​
5​ As ghee get heat up add in the whole spice to ​
​temper​
6​ Add in water allow it to boil ​
7​ Put green chilli as per spice level and add soak ​
​Basmati rice in boiling water​
8​ Cook Rice 75% approx 10 min in boiling water​
9​ For Assembling use thick bottom pot for arrange ​
​marinated chicken evenly ​
10​Now put half cook rice on top of the chicken,​
​Use turmeric color, Brown onion, ​ ​Ghee, Mint leaves
and coriander on top of rice​
11​ Use thick tava heat it on high flame ​
​cover the pot with damp cloth and lid ​
​on top of lid use heavy object to seal it evenly ​
​for giving dum​
12​ Now put on dum for about 25 min and remove it ​
​from tava, make sure to leave it 12 - 15 min for ​
​resting, then open the lid
