White Biryani:
Ingredients:
Chicken with bones 1 kg
Rice 750 gm
Oil ½ cup
Onion sliced 1 cup
Green chili paste 2 tbsp
Ginger garlic paste 1 tbsp
Yogurt 1 cup
Salt to taste
White pepper as required
Cumin 1 tbsp
Whole all spice 1 tbsp
Dried plum ¼ cups
Coriander 1 bunch
Mint leaves 1 bunch
Green chilies 4-6
Fried onion ½ cup
Screw pine essence few drops
Method:
Heat oil golden brown the onion. Add garlic, ginger and green chili paste cook well. add chicken, yogurt and all spices cook well. add dried plums, coriander, mint leaves and brown onion. Add boiled rice and screw pine essence. Add oil and left for simmer.
Mash Qeema Ghotala:
Ingredients:
Chicken minced 1 cup
White lentil boiled ½ cup
Eggs 3
Oil ½ cup
Garlic paste 1 tsp
Chopped onion ½ cup
Chopped tomatoes ½ cup
Green chilies 2-3
Coriander seeds 1 tbsp
Salt as required
Crushed black pepper 1 tsp
Turmeric powder ½ tsp
Cumin ½ tsp
Method:
Heat oil fry the onion golden brown. Add garlic paste cook well. Add chicken and cook for 2 minute. Add tomatoes, green chilies and all spices cook well. Add white lentil and eggs cook for 2 to 3 minutes. Dish out and serve.
Khatti Mirchain:
Ingredients:
Green chilies 8-10
Oil ¼ cup
Tamarind paste ½ cup
Crushed coriander seeds 2 tbsp
Crushed cumin seeds 1 tbsp
Fennel seeds 1 tbsp
Salt as required
Method:
Heat oil fry the chilies. Add all spices and tamarind water cook well. When dried out turn off the flame.
