Punjabi Salad:
Ingredients:
Tomato julienned 1 cup
Onion julienned 1 cup
Cucumber julienned 1 cup
Coriander chopped 1 tbsp
White chickpeas ¼ cup
Lemon juice 1 tbsp
Yogurt ½ cup
Salt to taste
Cumin 1 tsp
Whole coriander 1 tbsp
Red chili powder 1 tsp

Method
Mix all ingredients in bowl.


Beef Chatkhara Biryani:
Ingredients:
Beef with bone 1 kg
Sela Rice 750 gm
Oil ½ cup
Ginger paste 1 tbsp
Garlic paste 1 tbsp
Green chili paste 2 tbsp
Curry leaf 10 -12
Tamarind water ½ cup
Dried plums ¼ cup
Potatoes 500 gm
Green coriander (chopped) ¼ cup
Mint (chopped) ¼ cup
Tomato (slice) 1 cup
Yogurt 1 cup
Fried onion ½ cup
Salt as required
Red chili powder 1 tbsp
Turmeric powder 1 tsp
White cumin 1 tbsp
All spice powder 1 tbsp
Star anise 2 tbsp
Food color as required
Biryani essence as required
Clarified butter ¼ cup

Method:
Heat oil in sauce pan; add bay leaves and star anise cook for 1 to 2 minute. Add ginger garlic paste, green chilies cook for 1 to 2 minute. Add beef cook well. After that all spices and food color, cook. Add little amount of water cook till meat is done. Add boiled potatoes, yogurt, tomatoes, fried onion and green masala in it. Add boiled rice, biryani essence, food color and clarified butter and left for simmering.

Beef Seekh Kabab:
Ingredients:
Beef minced 1 kg
Beef fat 150 gm
Onion chopped 100 gm
Green chili paste 1 tbsp
Salt as required
Red chili powder 1 tbsp
All spice powder 1 tsp
Cardamom powder ½ tsp
Sweet soda 1 tsp

Method:
Blend onion in blender and sieve in muslin cloth. In a mixing bowl add beef and all ingredient mix well. then blend mince in machine chopper. Form minced in to kabab. Fry in frying pan. Give a smoke of coal and serve.
