Ingredients:-
2 tsp Coriander seeds
1 1/2 tsp Fennel seeds
1 Bay Leaf
1 Black Cardamom
2 Cinnamon sticks
1 Mace
6-7 Cloves
2 cups Water
1 Onion, chopped
8-10 Garlic, pods
1 inch Ginger
5-6 Green chillies
1/2 kg Chicken
1 1/2 tsp Salt
3-4 tbsp Oil
1/2 tsp Cumin seeds
2 Bay Leaves
2-3 Star Anise
1 Cinnamon stick
2-3 Cardamom pods
4-5 Cloves
1 Onion, Fried
2 tbsp Ginger-garlic paste
6-7 Green Chillies
1/2 cup Curd
1 1/2 tsp Salt
1/2 kg Basmati Rice, soaked&wahsed
Water
Method:-
In a thin cloth add coriander seeds, bay leaf, fennel seeds, black cardamom, cinnamon sticks, mace, cloves, make a potli of it.
In a cooker add water, onion, garlic, ginger, green chillies, spice potli, chicken, salt, mix well, close the lid and let it cook for 2 whistles.
Take the potli out and remove the chicken and the stock in two different bowls.
In a vessel, heat oil, add cumin seeds, bay leaf, star anise, cinnamon stick, cardamom pods, cloves, onion, mix well and add ginger-garlic paste.
Add green chillies, curd, chicken, saute it till turns dry.
Add the stock, salt, rice, water, close the lid and cook it on low flame for 15 minutes.
Our Yakhni Pulao is ready to serve.
