Ingredients: For Beetroot mixture 1/2 kg Beetroot, boiled, peeled & mashed 3 Potatoes, boiled 1 tbsp Red Chilli powder Salt to taste 1 tsp Garam Masala 1 cup Breadcrumbs Juice of 1/2 Lemon
For the stuffing 1/2 kg Cottage Cheese 3-4 Green Chillies, chopped 1/2 cup Coriander, chopped Salt to taste
For Cutlet: Beetroot mixture Stuffing Chaat Masala Green Chutney
Method of preparation: For Beetroot mixture Take beetroot in a plate add potatoes and mash them together. Add red chilli powder, salt, garam masala, breadcrumbs, mix well. Add lemon juice, mix it again.
For the stuffing In a bowl of cottage cheese add green chillies, coriander, salt, mix well. And our stuffing is ready.
For Cutlet: Take a fistful of the beetroot mixture and flatten it in your palm. Add a spoonful of cottage cheese stuffing, cover it and flatten it as well. Make more cutlets in a similar way. Meanwhile, heat oil in a pan, coat the cutlets with breadcrumbs and gently fry them on both sides till they are nice and crisp. Remove them on a serving platter, once they are done. Sprinkle some chaat masala on the cutlet and serve it with green chutney.
