Ingredients:\r

1 Regular Spaghetti Squash, halved and seeds removed\r
1 Tbls Extra Virgin Olive Oil\r
1/2 tsp Salt\r
Fresh Black Pepper\r
1/2 of 1 onion, sliced\r
2 oz Low fat Cream Cheese\r
1/2 cup Chicken Stock or Broth\r
1/2 cup Feta Cheese (or Parmesan)\r

Directions:\r

Preheat oven to 400 degrees\r
\r
Place spaghetti squash flesh side up on a baking sheet and bake 20 min, turn squash over and bake another 20-25 minutes.\r

Meanwhile, place sliced onion in a skillet over medium heat with 2 tsp olive oil and caramelize for 20 minutes, stirring occasionally.\r

Once squash has cooked and cooled, scrap spaghetti into the skillet with the onion, then add cream cheese and chicken stock. \r

Cook over medium heat while stirring until cheese has melted and squash is warm. \r
Finish by adding the Feta Cheese and enjoy!
