We stuffed our volcano potatoes with ham and cheese, but you can put whatever you want in there! Veggies...more bacon...more cheese...seriously, anything goes. Ingredients:

4 medium potatoes Olive oil Salt & pepper 8 slices bacon Sliced ham

1 cup shredded Cheddar cheese Barbecue sauce Sliced chives

Toothpicks

Tin foil

Apple corer

Directions:

Preheat the oven to 400 degrees.

Rub the potatoes with some olive oil and sprinkle on some salt and pepper. Wrap the potatoes in foil and bake for about 20 minutes.

Cook 8 slices of bacon over medium heat in skillet. Cut off each end up the potatoes so that they can stand up.

Scoop some of the insides out with an apple corer

Wrap each potato with 2 slices of bacon, using toothpicks to secure the bacon. Cut a slice of ham in half, layer with shredded cheese and roll up so it will fit in potato.

Stuff the ham and cheese in the potatoes. Top with more shredded cheese and smother with barbecue sauce.

Bake 30 to 40 minutes at 350.

Garnish the potatoes with chives and enjoy!
