Recipe:\r
1 cup masa flour\r
1/2 teaspoon sugar\r
between 1/2 cup and 2/3 cup water\r
lime juice, fill to 2/3 cup line\r
1 teaspoon chili powder\r
1 teaspoon cayenne pepper\r
1 teaspoon ancho chili pepper\r
1 teaspoon onion powder\r
1 tablespoon chili-lime rub\r
salt, to sprinkle\r
Before you make your little tortillas mix together your seasoning mix first, then set it aside. (chili powder, cayenne powder, onion powder, chili-lime rub, ancho chili powder and whisk together in a small bowl) In a medium size bowl, mix flour, sugar, water, and lime juice together until mixture forms a ball. Pitch off small portions and roll into a small ball; a little bigger than a marble. Once all of your dough is formed preheat oven to 400 degrees.\r
Take 2 plates that are totally flat on the bottom and flip one of them over. Place a long piece of plastic wrap over flipped plate (this side will be the bottom). Take one of your rounds, put it on the plastic wrap and fold the plastic over it. Take the other plate, bottom side facing down and press firmly to flatten the ball into a small tortilla. Do this for all of your rounds, roll-up each tortilla into a little pencil like cylinder. \r
Spray all your little Takis with cooking spray and toss them in the spicy seasoning mix and place onto a silpat lined baking sheet. Bake for 25 minutes to ensure they get crispy. Once they are out of the oven sprinkle with salt, to taste.\r
Enjoy!
