Camembert cheese is the second most popular cheese sold in France. More than 360 million wheels of the soft, spreadable foodstuff are produced annually. However, only one percent of French Camembert has the protected designation of origin ("PDO") label, which means the product is truly manufactured within its original region in Normandy. Why? Because small farms are being squeezed by big business and pasteurized milk has replaced grass-fed cow's milk.
