Today, Condé Nast Traveler joins Chef Sarah Aqel, owner of Dara Dining, in Dubai to try her favorite dishes at Orfali Bros. This Michelin-starred restaurant doesn’t follow a certain cuisine; instead, it combines unusual flavors and breaks the rules with its food.

00:12I am Chef Sarah Aqel, this is The Orfelli Bros Bistro, one of my favorite restaurants in the city.
00:17They don't have a cuisine, they just combine unusual flavors and these are three dishes that I absolutely love.
00:31This is the corn bomb.
00:34It has different flavors, different textures of the same ingredient which is corn.
00:40Crunchy tortilla, creamy corn puree and then it has a charred corn on top
00:45and so much umami from the parmigiano that is shaved on top of it that is 36 months old.
00:53Next thing that I love about this is the mess.
01:00Next dish is the Orfelli Bayaldi.
01:03Bayaldi means fainted, so the imam fainted after he had this dish from his wife the first time.
01:08There is a chili garlic and walnut paste that we use in a different eggplant in the Middle East
01:14and then there is the tahini yogurt excitement.
01:17Look at this texture.
01:22It is savory, it has a spice, it has a crunch from the walnuts.
01:28The eggplants are super mushy and cooked and then you have all these flowers that adds a floral,
01:34not so strong but just about enough flavor to it.
01:45And now the final dish, shish barak ala gyoza.
01:48So shish barak is arguably a Chinese recipe brought to the Sham region.
01:55I perfectly decided, you know what, there are a lot of arguing about this dish and I'm just gonna make it mine.
02:00There is a yuzu yogurt in the bottom, the suju spicy oil with some a little pepper I guess
02:07and then the meat inside.
02:09It has the right amount of fat.
02:17This dish makes me dance.
02:21Even if you're full, you can't leave without trying this pistachio cake.
