Ingredients:-
800 gms. Chicken
For Marination:-
1 cup curd
1 tsp. Salt
1 tsp. Red Chilli Powder
1 tsp. Turmeric Powder
1 tsp. Coriander Powder
1 tsp. Cumin Powder
1 tsp. Garam Masala
2½ tbsp. Ginger-garlic paste
3 green chillies, sliced
1 Cinnamon stick
1 Star Anise
1 Mace
1 Black Cardamom
¼ tsp. Green Cardamom, ground
8-10 Black Peppercorns
4-5 cloves
1 tsp. Ghee
Coriander Leaves, chopped
Mint Leaves
For cooking rice:-
Water (3 times the quantity of rice)
1 stick Cinnamon
1 Mace
1 Star Anise
2-3 Black Cardamoms
5-6 Cloves
4-5 Black Peppercorns
½ tsp. Green Cardamom
1 tbsp. Ghee
Salt to taste
300 gms. Basmati Rice
For frying onions:-
1 kg. Onions, sliced
Oil for frying
Layering:-
Chicken
Ghee
Coriander Leaves
Mint Leaves
Fried Onions
Basmati rice
Food colouring
Saffron milk
Green Chillies
Method:-
1. Marinate the chicken in a bowl by adding the marination ingredients to it and keep aside for 60-90 minutes.
2. In a saucepan, take water and add cinnamon, mace, star anise, black cardamom, cloves, black peppercorns, green cardamom, ghee, salt and bring to a boil. Once the water starts to boil, add the basmati rice to it. Drain water once cooked.
3. Once the chicken is narinated properly, cook it in a wok for 15 minutes.
4. In a pot layer the cooked chicken with ghee, coriander leaves, mint leaves, fried onions, basmati rice and again with ghee, food colouring, Saffron milk, mint leaves, fried onions and green chillies.
5. Seal the pot with wheat dough and cook on low flame for 5 minutes.
6. Take a pan and keep it on low flame and place the pot on the pan and cook for 10 minutes.
