Everyone's favorite part of Passover.

INGREDIENTS

FOR PLAIN MACAROONS
3 large egg whites
2/3 c. sugar
1/2 tsp. pure vanilla extract
pinch of kosher salt
5 1/3 c. sweetened shredded coconut (about one 14-oz. bag)
FOR CHOCOLATE MACAROONS
1/4 c. cocoa powder
1/2 c. chocolate chips, melted (plus more for drizzling)
DIRECTIONS

Preheat oven 350° and line two large baking sheets with parchment paper.
In a large bowl, whisk together egg whites, sugar, vanilla and salt until the mixture is light and foamy. (If making chocolate macaroons, stir cocoa powder and melted chocolate chips into egg white mixture now.) Fold in shredded coconut.
Using a medium cookie scoop or a tablespoon, scoop evenly sized mounds onto prepared baking sheet. Bake for 25 minutes, then let cool completely on baking sheets. (For chocolate macaroons, drizzle macaroons with more melted chocolate.)
