Masala Dosa is a variant of the popular South Indian dosa. It is made from rice, lentils, potato, curry leaves and served with chutneys and sambar. Masala dosa is one of the best and most popular breakfast items in the country and is a healthy and nutritious way to start your day.
Ingredients
For Dosa Batter
1 cup whole skinned urad dal
3 cups idli rice*
Salt as needed
For Stuffing
Oil
1/2 tbsp mustard seeds
Finely chopped Ginger
4-5 chopped Green Chillies
Curry leaves
1 chopped onion
Salt
Pinch of Hing Powder(Asafoetida powder)
3/4 tbsp Turmeric powder
1 tbsp Chilli powder
1/2 kg boiled and mashed Potatoes
Coriander leaves
Method
For Dosa Batter
Soak the rice and dal separately for 3 hours.
Grind dal first into a smooth consistency adding enough water.
Grind rice into a smooth batter by adding just enough water to get it going.
Combine the two, add salt, and let it ferment in a large enough bowl lightly covered, for about 6-8 hours in a warm place.
For Stuffing.
Take a thick bottomed pan and heat some oil in it, add 1/2 tbsp mustard seeds, finely chopped ginger, 4-5 chopped green chillies, curry leaves, 1 chopped onion, salt to taste, pinch of Hing Powder, 3/4 tbsp of turmeric powder, 1 tbsp of chilli powder, 1/2 kg boiled and mashed Potatoes mix all together add some water and allow it cook.
Add some coriander leaves on top.
Take a dosa pan and pour the batter in it and spread it in circular form.
Add little oil allow it cook from both sides.
Add the masala in the centre of the dosa and fold it.
The easy and quick Masala Dosa is ready to be served with sambar and coconut chutney.
