The national soup of Vietnam is a bowl of rice noodles, fresh herbs, and bean sprouts swimming in a fragrant broth. Traditionally a noodle soup consists of meat but Vegan queen Bhavna Kapoor will be demonstrating how to make the noodle soup vegan style.

Here is a list of ingredients you are going to need for Vegan Noodles Soup:

- 1 tsp Cumin Powder
- 2 tbsp Besan (Gram Flour)
- 1 cup Water
- 1/2 tsp Turmeric Powder
- Salt
- 1 cup Coconut Milk
- 1/2 tsp Ginger Paste
- 5-6 florets Brocolli & Cauliflower (steamed)
- 2 Mushrooms (sliced)
- 2 Baby Corn (diced & steamed)
- 3-4 French Beans (chopped)
- 1/4 Carrots (sliced)
- 1/4 Green Peas (blanched)
- 30 gms Tofu
- 50 gms Brown Rice Vermicelli
- 1 tbsp Roasted Peanuts
- 1 tbsp Red Bell Pepper (finely diced)
- 1 tsp Onion (sliced & fried)
- Coriander Leaves
