Chef Philip Gomes of Apicius, demonstrates the preparation of St. Peter's fish which is a very unique and special fish from the Mediterranean. He is head chef at Apicius located in Andheri, Mumbai, India.


Ingredients:

200g John Dory or St. Peter's fish
Salt
Black pepper
Onions
Thyme
Lime
Elephant garlic
20g butter
10g Green olives
10g Capers
10g Black olives
5g Parsley
Carrots and Zucchini, cut into fettuccine like slices
Mashed potato
Cherry tomatoes for garnishing
Wine for deglazing of pan
Olive oil
TIP: Instead of olive oil, one can also use refined oil
