Mini Ribeiro visits South of Vindyas located at The Orchid in her search to find exotic cuisine. Chef Bala explains cooking process of this delicate and creamy dish made with fresh prawns and a lot of coconut milk. Slightly spiced and cooked till the prawns are tender, Kerela Prawns Curry is perfect for special occasions or family get together.

Ingredients

Ground masala

Mustard seeds

2 tbsp oil

Turmeric powder

Crushed garlic

Methi (fenugreek) seeds

Chopped ginger

Chopped onion

Salt

8 -- 10 prawns

Tip: Shallots, coriander powder, chilli powder, pepper powder & turmeric ground together to make ground masala

Kerela tamarind

Curry leaves

Green chilly chopped

Fresh thin coconut milk

Fresh thick coconut milk
