A Very Different Coconut Pineapple Rice

Ingredients- 1/2 cup coconut milk 1 cup pineapple chopped 2tbsp ginger grated 2 tbsp garlic grated water 3 cups brown basmati rice some parsley chopped 1/2 tsp soya sauce some spring onions chopped 2 bay leaves olive oil 4 cloves salt and pepper to taste Preparation- Heat the oil in a large casserole until moderately hot. Add the bay leaves, cloves and toss well. Add the garlic,ginger and spring onions. Add salt and pepper. Add the coconut milk and pineapple,add water, soy sauce,fresh parsley and cook for a minute. Add the brown rice,salt and pepper and turn the heat low and let the rice cook undisturbed for a few minutes.
