In this episode, Dan demonstrates how to sear, chill, thinly slice and quickly sauté flank steak without marinating for thinly–sliced, perfectly cooked steak. This lower-fat option uses a leaner cut of beef and less oil than traditional cheesesteaks. It’s hard to go wrong with tender, thinly-sliced steak, sautéed peppers, pickled red onions (from FF#17) and your favorite cheese melted on a steamed bun. You can use the same technique for fajitas. Substitute sautéed sliced portabella mushrooms for the steak for your vegetarian friends. This episode features music from the Cincinnati-based band The Times.
