00:00What's your favourite Yorkshire grub?
00:05Favourite Yorkshire grub, well I've got to say Yorkshire puddings. I mean
00:11we've always had these discussions when we used to go into work. Alf White's son Jim, Jim's in
00:17his 80s now and we used to have these discussions and it's very true and this discussion couldn't
00:23have caused divorces because we always agreed that no one makes Yorkshire puddings like your
00:29mother does and now my wife isn't in this morning so she can't hear me having this conversation
00:34and I hope she never looks at what I've been saying here but it's very true. My wife,
00:40she tries very hard and they are exceptionally good but they're not quite as good as my mother's
00:46were. And what do you think your mother's secret was? I don't know, well I think the secret is
00:51you've got to have the consistency of the batter just right, the batter's got to be well beaten
00:59and the oven has got to be incredibly hot and dripping was always used as opposed to any oils
01:06or anything rubbish like that so dripping and it's got to be very very hot when your batter goes in
01:12and it won't be time me if I stepped into the kitchen just as my mother was opening the
01:17kitchen, just as my mother was opening the oven door to pour the batter in and if I distracted
01:24her I was in trouble because the puddings weren't going to turn out as well as they should be.
01:29You know I've had this discussion many times, I've had Yorkshire puddings this Sunday and people
01:35sometimes are aghast because we're having Yorkshire puddings tonight, we didn't have them yesterday
01:40and we're having chicken tonight but you have Yorkshire pudding with chicken, yes pork, lamb,
01:47beef, we have Yorkshire puddings. I had this discussion with Georgie Spanswick, dear Georgie,
01:52on Radio York and it got a bit of a debate going because I let it be known Christmas before last
01:59that we have Yorkshire puddings with our Christmas dinner but in true Yorkshire fashion you don't
02:06have them with your main course, you have them first and that's how we always have them, Yorkshire
02:12puddings first and there is a saying and I think it's very true and there's Yorkshire wisdom
02:20coming out of here, those that eat most Yorkshire puddings gets most meat because you're so full of
02:26Yorkshire puddings you don't want all that meat do you? That is very very true and what are your
02:32thoughts on ready-made Yorkshire puddings, would you ever buy them? Yes we have ready-made Yorkshire
02:39puddings and they're not bad considering the bought ones as I call them to my wife, they're
02:47okay and I wouldn't dismiss them out of hand so if times of the essence you know all you do is
02:55is grab them out the freezer, stick them in the oven and you've got your Yorkshire puddings very
02:59quickly, they're all right.
