00:00We loved cauliflower steaks. It's one of our favorites. Everybody loves it. And I think
00:18a lot of the things that kids don't like is not because they don't like it, it's because
00:23of the texture of the food. So I found a way to make cauliflower taste good. And it's good
00:32actually. It does taste good. It's just the kids don't like it because you have to boil
00:36it or steam it and it becomes so smooshy and they don't like the texture of food when it's
00:40like that. I don't know, it's something about texture in food. What we do is, I don't like
00:50to waste this. This is a lot of vitamins in this. So I kind of keep it on the side.
00:58Take cauliflower, cut it in half. And then I just kind of flatten it out. And then I
01:05think like it is if you were making steaks. So I cut it really thick. I do thick cuts
01:12in it. And I go straight back into whatever it is. You know, I love the green part in
01:19it. It has a lot of flavor. And it's a lot of vitamins in there. So this is what you're
01:26looking for. And I leave everything in it. And then what we do is, is we take, I'm going
01:33to put a, on the stove. And again, it's a very simple thing. The greatest part about
01:46it is, whether you do it, eat it warm or you eat it like cold, it's just the same.
01:52It's just a great thing to have in the house. Mimi, what do you like to eat? Do you like
01:56cauliflower steaks? I love it. What do you like about it? That the cauliflower is roasted
02:03good and it has a lot of flavor in it. Ah. So what do you like to eat it with? Um, steak.
02:12You can make it into a sandwich with the steak. You could eat it with rice. You could
02:18eat it with, um, mostly, mostly steaks. I was telling my mom the other day that I am
02:26addicted to olive oil. Because I think it's great. And I also think it's healthy. But
02:36you have to be careful because olive oil has a very high smoking point. And at some point,
02:41it just don't work well for food. So, I think that's just me. Anyway, um, I let it just
02:49get a little bit hot. And again, don't forget, we, um, especially in my community, the Latino
02:58community, we take any vegetables and we just peel everything that is great off of it. Because
03:03we believe we don't need it. And in this case, it's actually the opposite. It's a pretty
03:10good thing to have the green part so that it lives in there. So, I take it just like
03:15this. You kind of keep it together, so you don't crumble apart. So, hot, flavors. So
03:24what I do right now is I just kind of place it in there. So you can see. And again, it's
03:36going to keep it on your cutting board. That's what it does. So it doesn't fall apart. And
03:45you just cover all of it. Make sure you cover all the surface of the pan. So you can get
03:53all of it out of it. Once you put some salt and pepper. So you taste olive oil one more
04:02time. And you just kind of drizzle it. That's what I was telling you. I'm addicted to olive oil.
04:06And you just kind of drizzle a little bit on top of it. Kind of let it come up to give
04:10you that sear consistency. It brings out the sweet of the cauliflower. It brings out all
04:17the oils. But it also brings out kind of the naughtiness of it. So you have a lot of flavors
04:22in there. And the smell is fantastic too. A tiny bit of water. Very tiny. And I cover
04:28it up. And all I'm doing is I'm doing a very fast steaming process. I don't want to lose
04:34the crispiness of it.
04:43The person that really endures cauliflower steak the most in the family, I would have
04:48to say my little brother Israel. Because like since dad's not in the house anymore, Israel
04:57he's like the second. Like he's little. He's only like seven. But he's a really big eater.
05:07He calls himself the alpha male of the house. Since dad's not in the house anymore, Israel
05:14is like the alpha male. So he likes to eat a lot.
