00:00It's 6 a.m. in the morning and the delicious aroma of freshly baked bread fills up the
00:13pavements of Rola Street in Bharatbai.
00:15Inside a modest bakery, a small army of 20 bakers work actively, getting the morning
00:21breads and bakes ready, much before their loyal customers line up at 8 a.m.
00:26Rustam Surabhwadia, who started this place 30 years ago, leads his team and the bakers
00:32do their daily bread dance.
00:33We started the Bombay bread, I'll show you, can I get a piece of Bombay bread, a packet
00:39of Bombay bread, give me a packet.
00:41Now this Bombay bread is typical, if you go to Bombay, it will be called Bombay bread.
00:48We in Dubai call it the Bombay bread because Ladi is a typical Indian, you know, pav, what
00:55The very noble pav, my dad was in the food industry, that was 39, Second World War, there
01:02was an Italian called Luigi Perotti, and he had to run away from Italy and come to India
01:08for some reason, and he was a master chef, dad met him, that's how in 39 they started
01:15a bakery called Farmers, it was a huge bakery, 120 people worked, in those days there was
01:21not a single bakery who would make the whole wheat bread, the French bread, the baguettes.
01:27Basically it was supplied with a cream because the Kemps Corner area is the cream of Bombay.
01:33The consistency of the quality and the simplicity, these are the two things a bit unique with
01:39the Parsis, very eccentric about their qualities.
01:43We don't compromise on the ingredients, the prices go up, no problem, fair enough, fight
01:50with the supplier and people who have had a particular taste of it, say a week back
01:57or a month back, they keep coming back, this is the unique part of it.
02:01Now this particular bread, it looks very simple, you know, it looks like a piece of loaf, but
02:09this is not crisp, you see, you can see, this is crisp, you can literally hear the sound.
02:16Aint it well said, come to Bakewell for your daily bread. Sunita Menon, Gulf News.
