00:00Potatoes aren't just for side dishes.
00:02I've got three main dish recipes
00:04where the potato is the star of the show.
00:05First off, I'm giving you a buffalo chicken
00:08roasted potato casserole.
00:09Next up, cheesy scallop potatoes with ham.
00:12And then finally, our top rated,
00:15most popular potato casserole with my own little twist.
00:18Starting off with the buffalo potato chicken casserole.
00:21You can control the spiciness here.
00:22You can use whatever potato you want here.
00:24My favorite potato is the gold potato.
00:27These are gonna hold up to cooking
00:28without getting too mushy,
00:30but they just have a nice little
00:31buttery kind of sweet flavor.
00:32So I'm just gonna cube them up
00:33like you would roasted potatoes
00:36because the first step of the recipe
00:37is to roast the potatoes
00:39and then we add the chicken and everything else.
00:41All three recipes I'm using today
00:43are all recipes, top rated recipes.
00:45They'll all be linked below,
00:46but know that I might make a couple little,
00:48you know, changes to them.
00:50And it's not because the recipes don't work.
00:51It's because I just like to make a couple little
00:54zhuzhs every now and then.
00:57Potatoes are cut.
00:58Now we have to get our buffalo spice mixture going.
01:01We're gonna do about equal parts
01:03of olive oil and buffalo sauce or hot sauce.
01:06I like this kind for buffalo flavor.
01:10And then into that mixture,
01:13some garlic powder and paprika.
01:16Some black pepper and salt.
01:17You're just gonna kind of heat this up over low heat
01:19just to kind of bring everything together.
01:23All right, so we're going to take
01:26about half or so of our spice mixture
01:30and toss the potatoes in it.
01:31You just wanna be sure it is all well coated.
01:35You know the formula, color equals flavor.
01:37So take your casserole dish and coat it with cooking spray.
01:41We're gonna roast the potatoes.
01:42This is gonna be the first layer of our casserole.
01:45Potatoes just take a lot of salt,
01:47so I'm just gonna give them an extra little sprinkle.
01:51All right, now this goes into a very hot oven.
01:55Recipe calls for 500.
01:57My oven runs a little hotter than it's supposed to,
02:01so I'm gonna do 475.
02:04This is gonna take about 40 minutes or so,
02:06and you're just gonna kind of toss them
02:07until they're all roasted,
02:08and then we'll just build on top of that.
02:10While that is happening,
02:11we're going to marinate our chicken.
02:13So I'm just using boneless, skinless chicken breast.
02:15You could totally use chicken thighs for this recipe.
02:18Just gonna dice it up into bite-sized pieces
02:21similar to the potatoes.
02:22We're just gonna put the chicken
02:23in the same bowl as the potatoes
02:26and toss it with the remaining sauce.
02:28I'm gonna let this hang out for about,
02:30well, while the potatoes cook.
02:32Also, in the meantime, cook off some bacon.
02:35That's also going in this delicious casserole.
02:37All right, our potatoes are just about done,
02:39and we're gonna top it with the chicken,
02:40but before we do that,
02:41I'm just going to sear the chicken off a little bit.
02:44This is just gonna speed up the cooking time
02:46because those potatoes are pretty much done,
02:47and then we just layer it.
02:49Potatoes have the color and the crispy texture.
02:53And then the chicken just goes on top of that
02:55just to cool it off a little bit, you know, for my kids.
02:58I'm gonna just add a little drizzle of ranch
03:01in between the two.
03:02That's just gonna kind of cool off some of that heat.
03:04And on goes the chicken.
03:06A sprinkle of cheese.
03:07This is just a Mexican shredded cheese.
03:11That bacon we cooked.
03:13This has game day written all over it.
03:16And then that's it.
03:17It goes right back into the oven.
03:18Everything is still really hot,
03:20so it's only gonna take about 15 more minutes.
03:22Oh my goodness.
03:26I just wish y'all could smell it.
03:28I just wish you could smell this.
03:30Starting off with a bang.
03:33Little more green onion.
03:36Oh yeah.
03:39It is everything that we just put in that casserole dish.
03:42You can taste every single thing individually,
03:45but also at the same time.
03:46It's definitely rich and hearty enough
03:49that it will fill you up for dinner.
03:50It will feed a crowd,
03:52so it makes it perfect for a party also.
03:54For something this delicious
03:55that started with the humble potato,
03:58should be illegal.
03:59Okay, for my next trick,
04:01cheesy scallop potatoes with ham.
04:04Typically, you've seen scallop potatoes as a side dish,
04:07but add in some ham,
04:09and all of a sudden, it's a main entree.
04:11You could serve this with just a simple salad
04:13or some green beans, and dinner's done.
04:17We know scallop potatoes are very thinly sliced potatoes
04:21that are layered with cream and cheese.
04:23You just wanna slice them as thin as you can, okay?
04:26Potatoes are done.
04:27The only other thing you have to chop up is an onion.
04:30The cream sauce is the next component
04:32for the scallop potatoes,
04:34so I'm gonna start by melting butter,
04:36three tablespoons of butter,
04:38and once that's melted, I'm gonna add in the onion,
04:41so just in a classic bechamel,
04:42you don't add the onion like that,
04:44but I think it adds really good flavor.
04:46Now, you're just gonna cook those onions
04:47until they're soft and translucent.
04:49All right, once that's softened, go in with your flour.
04:54Same amount of flour as you do butter.
04:57Then, you wanna cook that for a couple minutes
04:59to get the starchy taste out.
05:02All right, then go in with half-and-half and milk,
05:05and you just wanna kinda whisk that in,
05:08and we're gonna bring that to a simmer
05:10until it is a thickened cream sauce.
05:13Once it's all thick and rich and creamy,
05:17we'll just season it and take it off the heat.
05:20I'm just gonna season it up with salt and pepper,
05:22a little garlic powder, a little onion powder,
05:24paprika, and Worcestershire.
05:27All right, thick and creamy,
05:29and now we just layer it all up.
05:31You're gonna go in with half of your potatoes.
05:33Just kinda overlap them.
05:35Okay, next goes your ham,
05:37and you're just gonna take deli ham
05:40and just kinda chop it up a little bit.
05:42Every little bite gets a little ham, a little potato.
05:45Then, I'm going in with half of my cheese,
05:47so this is a mixture of cheddar and Monterey Jack.
05:50I'm lovin' this version versus just classic scallop potatoes
05:55that are generally just with Parmesan
05:57or something a little more classic.
06:01I like the bold flavors goin' on in here.
06:03Okay, goin' on with cheese.
06:05I'm gonna save just a little bit of cheese for the very top.
06:12And then, just a little more cheese,
06:13and then this goes into the oven.
06:14You're gonna cover it for the first 40 minutes,
06:17and then uncover it until it's all browned and bubbly.
06:20I like to spray the top of my foil
06:24when I'm covering something cheesy
06:26so that it doesn't pull all the cheese off
06:29when you take the foil off.
06:31This one bakes at 375 for about 40 minutes.
06:34Then again, we'll uncover it for another 20 or so
06:36until it's bubbly.
06:37Divine.
06:39Okay.
06:44Cheesy scallop potatoes with ham.
06:48You'll see it's bubbly,
06:49you know, like that creamy mixture has come up.
06:52That needs to get reacquainted with the potatoes,
06:54so it has to sit for about 10 minutes or so
06:57before we can dig in, unfortunately.
07:00Little fresh chives to fancy it up.
07:03Oh my gosh, creamy indulgence.
07:15Look at that.
07:20Dinner is served.
07:24This is the dreamiest pan of potatoes I've ever made.
07:28The potatoes are just so tender, they melt,
07:30but yet they still, like, held their shape a little bit.
07:34But the salty ham and cheese
07:37with that kind of, like, sweet creaminess,
07:40A plus, plus, plus.
07:42This recipe is our top rated potato casserole recipe.
07:47It is called hamburger potato casserole.
07:49However, today I'm turning it into sausage potato casserole.
07:53That's the only thing I'm changing
07:55is I'm using sausage instead of ground beef.
07:58You do whatever you want.
07:59So I'm just gonna brown off the sausage in the skillet.
08:03So that's that.
08:04That just cooks until it is browned and crumbly.
08:07Okay, for this one we're making just a creamy little mixture
08:11to pour over it with our favorite can of convenience,
08:15cream of mushroom soup.
08:17I'm just gonna add a little bit
08:18of finely chopped onion in here.
08:21Okay, and then I'm just gonna stir in some milk
08:23and season it with some salt and pepper.
08:25Now all we have to do is slice our potatoes.
08:27Since I'm using the gold potatoes
08:29with that really thin skin again,
08:31I'm not going to peel them.
08:32If you want to, you can.
08:34Good to go.
08:36Gonna drain that and layer it up.
08:38Okay, casserole dish, gonna give it a spray.
08:42And I'm gonna layer in the potatoes and sausage
08:44and then I'll pour the soup mixture over.
08:48I mean, who doesn't love this?
08:50Could always add in some peppers, I think would be nice,
08:53some bell peppers.
08:54I think I might do that next time or some spinach.
08:58Okay, and then pour our soup mixture over.
09:01Now I'm gonna cover it and cook it most of the way
09:04and then we'll uncover it, top it with some cheese
09:06and finish it off.
09:08That's it.
09:09Potatoes are mostly tender, so now we're going to uncover it
09:12and top it with cheese and then finish baking
09:15until everything is tender and the cheese is melted.
09:19Back into the oven, we're almost done.
09:22Oh, hello deliciousness.
09:27I know it's not your most nutritious dinner,
09:30but see, we can make it look nutritious.
09:33This isn't the prettiest one of the day,
09:35but I really think it's the one your family's
09:37gonna like the most because the definition of,
09:41like I said, meat and potatoes.
09:43Also the definition of just comfort food.
09:45I love how the little bits of sausage and cheese
09:48that I saved for the top, you know, kind of crust it up
09:51because then you've got all the different textures
09:53going on now, you've got the soft and the creamy,
09:55but you also have that kind of crunch.
10:00Mm, excellent move using the Italian sausage.
10:04It is like a whole different experience
10:05from when I have made this with the hamburger meat
10:08and I'm telling you, I mean, it pops in there.
