Esquire Philippines sits down with Ian Libang, co-founder and beverage director of The Bizarre Bar. He talks about their unique cocktail degustation, which is basically a five-course pairing of drinks and bites at this intimate venue

00:00Every drink has a story to tell, every drink has an experience by itself.
00:06Coming into Bizarre other than a bar is also kind of like a theater show.
00:11Bizarre actually is a, technically it's a lavish cocktail degustation.
00:15Cocktails take the center stage and then the bar bites supports the cocktail.
00:21So our first menu release is called The Roots.
00:24So The Roots meaning the roots of Philippine culinary culture.
00:27So think of your regular Filipino household ingredients such as
00:30suka, patis, calamansi, toyo, bigas, and nyug.
00:37At Shara, technically is a cocktail that is paired with vinegar.
00:41The cocktail is kind of like an Aperol Sprite, took it in a way of a Filipino flavor.
00:46Sausawan, we have that thinking.
00:48Sausawan is soyo, calamansi, patis, but we turn it into a cocktail form.
00:54We have our gin pong.
00:56We created our own pomelo vinaigrette as the pomelo flavor.
