00:00It's Coop with Big 98.1 on the incredible Disney Treasure,
00:04talking about one of my favorite things, as you can see.
00:06Food!
00:07I love food, and obviously Coco themed as well.
00:10I've got two amazing chefs with me,
00:12Chef Acai and Chef Grace.
00:14Can you guys, let's just start over here.
00:16I want to know everything about all of the foods.
00:18What do we have right here?
00:19So first of all here, we have the black bean soup.
00:23Very traditional when we think about black beans.
00:25Has been in the Mexican cuisine for a while now, right?
00:28We add chipotle pepper, kind of like intensify the flavors,
00:32and we serve it with pork cutlet.
00:34Very traditional take on Mexican cuisine.
00:36Before we move on to some of these other dishes,
00:38I want to talk about kind of the theme.
00:39I know Disney thinks of absolutely everything.
00:41I mean, if you just took a look around,
00:43you could see that Disney thinks of everything.
00:45Talk to me about kind of the curating of this menu
00:48and tying it in with Coco.
00:50Grace.
00:51So we did a lot of research with the movie
00:55and actually going and visiting places
00:59and restaurants.
01:00So we wanted to make sure that we continue telling the story,
01:03but through our craft, through our artistry.
01:05Do you guys have a favorite dish
01:06that's sitting out here right now?
01:07Of course.
01:08You say, what's your favorite?
01:09For me, it would be the shrimp diabla.
01:11I take on the Veracruz side of Mexico.
01:14Very coastal.
01:15If you think about vibrant colors and freshness,
01:19we use the shrimp sauteed with garlic.
01:21We use a red chipotle mild sauce,
01:25so you can taste the smokiness.
01:27Fingerling potatoes, pickled red onions, and birotes,
01:31a very traditional bread in Mexican cuisine.
01:33Let's move on to what I see here as a scallop,
01:35which is one of my top three favorite foods of all time.
01:37What is this dish?
01:38Of course, this is our sea bass seared with adobo.
01:41Adobo, again, is a spice very common
01:44in traditional Mexican cuisine.
01:46We combine peppers, spices.
01:48We serve it with Romanesco, carrots, peas,
01:53and chimichurri sauce.
01:54Okay, and what do we have here?
01:56Here is the braised short rib.
01:59We serve it with green beans, mashed potatoes,
02:01poured wine, and crispy shallots.
02:03Looks absolutely delicious.
02:05All right, Grace, what do we have going over here?
02:06You're the sweet stuff, right?
02:08I am. Okay, I love it.
02:09I can tell that just by looking at you.
02:10Talk to me about the sweet stuff.
02:11All right, so here we have a chocolate spicy tart.
02:14It has some cayenne pepper in it,
02:15and the reason why we went with this dessert
02:17is because the history of chocolate started in Mexico,
02:20so we wanted to include that tradition in this pastry.
02:24We have a margarita cheesecake,
02:26which has a salted shortbread crust
02:30and a raspberry agave sauce.
02:33Trying to put a spin and a play
02:35on that very favorite beverage.
02:38No tequila, so it's friendly for everyone.
02:41And then, of course, we had to have a tresleche.
02:44So it's a traditional tresleche with coconut,
02:47but we put a little spin on it and make it our own.
02:50It's served warm with a dulce de leche ice cream.
02:53So when you're here on the Disney Treasure,
02:54which is incredible in and of itself,
02:56you got to fill up the tummy.
02:58You got to come here to Plaza de Coco,
03:00get some food and a show,
03:00which we'll talk about a little bit later on.

03:06Plaza de Coco, and we got to talk about the show,
03:08because it's not just amazing food that you're going to get.
03:10When you come here, you're going to get a show as well.
03:12I mean, nobody puts on a show like Disney,
03:14so I'm here with Juan and Mario.
03:16Can you guys talk to me a little bit
03:17about the show that happened here?
03:19Yes, we are inviting you
03:21not only to taste the taste of Mexico,
03:23but the Ribeiro family from our beloved Coco film.
03:26Miguel and his familia are welcoming you in
03:29to entertain you.
03:30So they'll be singing all of the favorite songs
03:32from the film, as well as authentic Mexican songs.
03:35We have mariachi performers,
03:38a story that's happening where, you know,
03:40we are a few years later
03:41and we're celebrating Dia de los Muertos.
03:43So we're sharing our culture with you through the film,
03:45through music and dance.
03:48All right, Mario, talk to me about the planning
03:50that goes into something like this.
03:52Absolutely, part of my focus was bringing musicians together,
03:57authentic mariachi performers,
03:59to play the beautiful music of Mexico.
04:01We went through a process of casting and auditioning
04:03and preparing them and rehearsing them
04:05to truly, truly portray our beautiful music of Mexico
04:09with some very known numbers like Cielito Lindo,
04:13Jalisco Noferrajes, El Sol de la Negra.
04:16We also have a beautiful folkloric dancer from Mexico.
04:19True authenticity in the musicianship,
04:21in the music, in their artistry.
04:23And we love having them be part of this
04:25Plaza de Coco here in San Francisco.
04:27Can you tell me about how many shows you guys are doing?
04:29So for instance, if someone's,
04:30they're gonna plan their trip to go on the Disney Treasure,
04:33they're gonna come here, have some amazing food,
04:34see the shows, talking about kind of how many you do,
04:37how they can see the show and, you know, enjoy it.
04:39So for our guests, this is a seven night cruising.
04:42And so we have a rotational dining.
04:45So part of your experience will be to dine here
04:48in Plaza de Coco.
04:49So you'll actually experience two different shows here.
04:52Night one is all about familia.
04:54So we want our families that are here on vacation
04:56to just come and be with their family,
04:58enjoy that time together.
05:00And so you'll be with Miguel, Abuelita Elena,
05:02the Rivera family.
05:04Then you'll come back later in the week
05:06and experience our night two show
05:08where it is Dia de los Muertos.
05:10And we're sharing all that comes with that,
05:12honoring our loved ones that have passed before us
05:15in a really, really beautiful, authentic way.
05:18And it's just very touching.
05:19And you get to see Miguel up here
05:21performing with the mariachi.
05:22It's just really, really cool.
05:24I bet the kids freak out.
