With fennel and thyme, it's full of flavor and won't leave you feeling guilty afterwards.

00:00Food is healthiest when you cook it yourself.
00:04And once you try my fennel and citrus whole roasted chicken, you're never going to get
00:08a rotisserie chicken at the grocery store again.
00:12All you need is a few cloves of whole garlic, the juice from two lemons and two small oranges
00:19or clementines, a nice handful of fresh thyme, one bulb of fennel, kosher salt, fresh cracked
00:29pepper and some good olive oil.
00:32So I combine all of the ingredients into a Ziploc bag along with the whole roasted chicken
00:37and I put it in the fridge overnight or up to 24 hours.
00:40I've already had one hanging out for a while and let me show you how easy this is.
00:45I'm going to add a little bit more olive oil just on top to give it that gorgeous golden
00:51skin, little sprinkling of salt and a final crack of fresh pepper and into the oven.
01:07It is so tender and so moist but with so much flavor.
