After spending many years as an Eco-chef feeding Jedi and Arab royalty a man from Rowledge has now developed a product to bring the heat to sweet.
Dan Stearman a chef turned condiment creator inspired by the American Mike’s Hot Honey which Dan had tried on a trip to Brooklyn, New York in 2014. After eating the condiment on pizza Dan tried to source a similar product in the UK with no success so decided to make one instead.
Due to Dan’s determination and hard work, he created Wilderbee a Hot Honey a chilli-infused honey. To find out what is best to put the source and recipes head to https://www.instagram.com/wilderbeehoney
The “top secret” process of making the sauces has led to three products two of which have received great taste awards.
Being born in the Forest of Dean in Gloucestershire part of his move to Surrey was to make sure his son was involved in nature as Dan was as a kid. Together they enjoy going to Alice Holt Forest, Bourne Wood and swimming in the Frensham ponds.
Dan wants to expand the business to more shops but also wants to be an example of how the food industry can be more ethical and sustainable. He says many companies cut corners for costs and as a result, damage the environment and add unnatural additives to products.
He said: “Sometimes you pick up a product read the label and it is like a school science project with all the chemical names.”
