The new Assaggini is officially open on George Square brining a unique style of Italian dining to Glasgow City Centre. In collaboration with locally brewed West beers, each menu item also has a drinks pair.

00:03My name is Panos, I'm the General Manager in the new Asagini restaurant in George Square.
00:08I'm very happy to welcome you in the restaurant.
00:11We are the third of our Asagini restaurants and the biggest one in George Square.
00:17We've been open for a month almost, but we only launched officially last week with a big party.
00:23And I would like to take you through some of our dishes and some of our beers from West Brewery.
00:27In front of us we have two choices.
00:29So the concept is 13 fresh pastas, 13 pizza-style pizzas and 13 beers,
00:35all of them come from West Brewery.
00:37That makes us the only venue outside of the brewery to actually host the whole range of beers.
00:42In front of us we have the Radiatori Norma.
00:45It's a Radiatori-shaped egg pasta, gently fried aubergine ricotta.
00:51And we paired this with the San Mungo.
00:55San Mungo takes the name from a patron saint of Glasgow.
00:58It's our house lager.
00:59It has a rich, herbaceous and citrus aftertaste
01:02that helps the beer shine through the rich tomato base that the pasta has.
01:07And here we have our Puglia pizza with Fior di Latte goat cheese.
01:12We have broccoli, chili and this we pair with a Munich-style ragu.
01:16The ragu, the red, has a toasted barley and that makes it quite rich, quite biscuity.
01:24It can stand and shine through the richness of the dish.
01:27Our pasta is a fresh pasta.
01:30Most of them is egg-based pasta.
01:32And our pizza is a 48 hours proven sourdough.
01:36So that gives a lot of extra flavors, gives the dough the time to showcase the profile.
01:43The concept is, the assaggini means small Italian dish to share, small taste.
01:47So the concept is to get a bit more of all your favorite dish you can have.
01:51So there's no dilemma anymore in pizza or pasta because you can have both.
01:55The whole range of beers we host is paired to match each individual dish.
01:59And on top of that, an alcoholic beer can match all of the dishes.
02:03So based on the profile of the beers and the type of the malt or the barley used
02:07and the production, you can actually match it with the flavors of the pastas.
