10:07It's no secret that France has long been a nation of cheese lovers, with the average

10:27with cow's milk in northern France, to a whole variety of goat's cheeses from the Loire Valley,
10:32the Alps and other regions.
10:35The dairy industry as a whole accounts for almost 300,000 jobs, leaving no doubt that
10:41cheese is big business.
10:44But though it is a French staple, the traditional ways of consuming cheese are changing.
10:51Fromagerie Quatre Hommes, an iconic Parisian shop dating back to the 1950s, has seen this
10:58evolution first hand.
11:00I think traditionally you have a cheese plate after the main course and before dessert.
11:07This is the traditional way of having a cheese plate in France.
11:13But I think this traditional way is evolving.
11:17Now you can have an all cheese and meat course.
11:22You can have cheese in appetizer and not after the main course.
11:28You can have cheese at breakfast.
11:30We really changed the way of eating cheese.
11:35And though they may not stay loyal to their eating habits, Quatre Hommes says the Parisians
11:41know what they want, and that's French cheese.
