00:00Hi, I'm Rosemary Trout, a professor of food science, and we're here today in the Dr.
00:04Delish offices to answer some of your food and kitchen science related questions.
00:12I have a beaker of anonymous questions, so let's see what the first one is.
00:16Is it healthy to eat a grapefruit every day?
00:20Generally, yes, unless you're on statins or other types of medications that can have an
00:25interfering effect. Purinocoumarins are metabolite compounds found in grapefruit
00:30that can interfere with cytochrome complexities, which are absolutely essential for cellular
00:35metabolism. If you're not on statins or some of these medications, absolutely have as much
00:41grapefruit as you like. It's actually really good for you. It's full of fiber, water, and
00:46other nutrients like vitamin B and vitamin C. In fact, you get almost your entire recommended
00:52dietary allowance of the B vitamins in one grapefruit, and you definitely get the full
00:57complement of vitamin C in one grapefruit. People like to cut up the sections and sprinkle
01:02it with sugar, which is really delicious, but you can actually cut it in half, put it
01:07in the broiler, warm it up, and then sprinkle it with a little bit of salt. It's something
01:11a little bit different, and the salt will minimize the bitterness, and it'll maximize
01:16the sweetness, and you don't have the extra sugar calories, so it's really delish.
01:21Grapefruit is super versatile, and you can use it in both sweet and savory applications.
01:26In fact, citrus fruit is ripe in the winter when nutrient density is at its peak, and
01:31those savory applications are fantastic because citrus fruits, in particular grapefruit, is
01:36pretty high in glutamate, so you get that nice savory quality. Grapefruit juice is also
01:41nutrient-dense and really tasty, but it's a little more concentrated sugars, and you
01:46might miss out on some of the fiber, so to get the full complement of nutritional density
01:51that a grapefruit offers, you're going to want to eat the whole fruit. Thanks so much
01:54for watching. If you have any questions, be sure to leave them down in the comments below,
